Sounds like a blog title from 2009!

Hi! I know it’s annoying when people say this but…… I CAN’T BELIEVE IT’S ALMOST MAY! That means it’s almost summer. My kids get out of school at the end of May, so our summer is coming up fast. I am taking them on a special trip to Universal Studios just the three of us in June, so we’ll be kicking the summer off in a fun way.

Spring has been lovely though!

I went with some girlfriends to King Family Vineyards for an afternoon of sun.

It’s funny how you go from cold to melting this time of year depending on where the sun is.

After the vineyard, our group went to The Jervey for dinner. While the food is quite expensive, I would 100% recommend going to get drinks and apps at the bar. Look how beautiful!

I also had a great time perusing the farmer’s market one Saturday. I can’t tell you the last time I did something solo like this.

We had a great visit with Grammie and Pea after the wedding.

Including going to The Scrappy Elephant for art supplies for mom.

I also made sure to vote in our special election. Proud of Virginia!

There was no school that day and Birch, his buddy, and I got 12,000 steps going to all the playgrounds in walking distances (more than once).

On the social front
We had a few fun happy hours at our usual spot!

Kath Eats Real Food
I treated myself to a Blue Apron box using my own promo code – KATHEATS – which gets you 50% off your first three boxes plus free shipping. You do NOT have to subscribe – you can order them when you want and whenever those first three boxes are you get 50% off. This is a free food offer too good to be true! I got a mix of The Dish (heat and eat), Assemble and Bake, and even their egg bites.

I made this amazing Cheesy Pesto Baked Chicken for a couple of friends who came over for dinner. I love the Assemble and Serve meals because you just put the ingredients together and they’re mostly hands off.

Everyone raved! This is a recipe to remake.

I took one of the Dish meals over to Ellen’s for a Survivor lunch.

Another day I made this spicy meatloaf that I loved!!

And finally this Romesco Salmon was a big winner too (Mazen liked this one a lot!). Those smashed potatoes were so good, especially with the dill.

And one night I took the boys out to Brazos, our favorite taco spot! My go-tos are This Is My Yam and the Spicy Chipotle Chicken.
