Matt at Home, Chapter 4

Well it’s been a long day, now that my weekend is over and work starts at 4:15!  At least the weather is getting nicer – I was able to bike to work in a t-shirt this morning, and the sun was shining bright later.

I took a nice nap after getting home, did some cleaning of the house and some reading.  While mopping the floor, I think I slicked up the bottom of my shoes because later I slipped and smashed my arm and knee on a table… I HATE bone injuries!!!!!

Then came time to prepare dinner.  Since I thawed that chicken out, I figured tonight would be a good time to use it up.  I decided on an easy southern-style dinner: barbeque-simmered cabbage, seared chicken, and skillet ‘taters.

I’m tired and hurting so I’ll just kinda throw some pictures up here chronologically with some light commentary:

I microwaved the potatoes for a few minutes to begin softening them:

Finish cooking the chicken and then use the juices to finish the ‘taters:

    otherwise it looks great! I love cabbage. Made those cabbage rolls you guys had a while back. Very good!

    your butchering skills are perfection! i have my own whole chicken defrosting right now. i guess i’ll have my go later this week.

    will there be a soup in the works or do you freeze your stock? or do you make stock in one huge go, à la alton?

    Ok, I LOVE cabbage (actually had some tonight steamed with fire-roasted tomatoes!) I’ve never had it with BBQ though….let me just say that:

    I <3 <3 <3 bbq sauce + cabbage – so I think that sounds like a winner!!! How much bbq did u use in this recipe???

    That cabbage looks really good. We’re having BBQ pork tonight so it might be BBQ-sauce overload to have it with BBQ cabbage…but there’s always tomorrow, right?
