Lunchfast

Happy sleeping!

In an effort to save a few bucks, we decided to do brunch at home today – with a mountain of Great Harvest Pancake Mix!

I woke up around 7:30 and sipped on coffee to tide me over. Also had a bite of banana! By 9:30 I was ready.to.eat.

Matt made a beautiful collection of pancakes – thick and hearty with pecans and CVILLE CLUSTER inside!!

We smothered them with jam, sunbutter, butter, banana and syrup

I ended up eating most of my stack and shared a little with Matt.

Now that we’re full, we’re going on an urban hike (hoping to beat the extreme heat!) and are chilling out the rest of the day. Ha!

    We had the same morning! Complete with GH pancakes topped with nut butter 🙂 The mix is phenomenal by the way – tell Matt I wholeheartedly agree with his “review” of them on that video!

    I definitely can’t do traditional brunch (as in, 11 am) without eating a pre-brunch breakfast– I always wake up ravenous! I prefer the hobbit-style meal schedule 😉

    Yum, pancakes! I’m a little jealous you get to enjoy pancakes with you husband- I’m married but my husband wont eat breakfast before 11 except on very rare occasion.

    Granola inside pancake… I’m trying to imagine what that’s like. I like melty things like chocolate chips and blueberries, but yummy is yummy so I bet this was good too! 🙂

    Mmmm! I had pancakes for lunch, (brunch?) too! It was definitely that kind of day. I don’t like sunflower butter on them, though, I’m thinking of using the sun butter on more savory dishes… too salty to be sweet!
