Little Bit Of Lately

Flashback to my lately posts!! Here are the meals my phone has captured in the past few days : )

Lunch at Ralph’s BBQ on the way home from the beach. Gourmet pickings are slim along I-95, and we stopped at Ralph’s in Weldon on our way down. On our way back home, we tried another BBQ place and ended up leaving when we got there and drove 45 minutes back to Ralph’s. We took the nice buffet for granted on the way down! They had a decent vegetable selection (fried okra!!) and the food was good.

Later that night Matt picked up Whole Foods salad bar for our dinner after a quick trip to the store to re-stock. We had tofu, plantains, garlicky kale salad and pineapple.

After dinner we took a walk downtown – we missed Cville so much! Feels like home.

Monday morning Mazen and I made smoothies – berries, milk, yogurt, oats, small handful of greens. Plus fresh berries on top and a sprinkle of oats.

Lunch was a No Bull Burger hidden under a pile of greens with manchego cheese and a few Mary’s Gone crackers.

For an afternoon snack we met friends at Spendora’s for a sweet treat!

Dinner was a frittata of sorts. Really it was baked scrambled eggs! Matt forgot to add any milk to the mix, so it was baked eggs with tomatoes and eggplant. We had more eggplant and tomato sauté on the side. Delicious!

    Kath, I always appreciate your bbq picture! I love how you enjoy a liiiiitle bit of meat, and then fill up on the greens and sides. My boyfriend always laughs at my plate, because when we go get bbq in Austn, I’ve been known to skip the meat completely! Haha! But the sides are just SO good, and they don’t make me feel like taking a 3 hour nap after lunch 🙂

    Is that an ice cream cone? The cone is so teeny and cute!

    Love the color of your smoothie. I use powdered greens most of the time in mine, with apples and lemon for fruit, and they usually turn a sort of grey-ish green color, ha. Berries always make smoothies look much prettier 🙂

    That meal from Whole Foods looks delicious! Also, those sweet potato fries…YUM! I love making fries by just roasting some potatoes, they are so yummy and not as soaked in oil.

    Hi Kath! Good eats! Wow, that restaurant must have been horrible to endure a 45-minute drive in the wrong direction! 🙂 I find that the Whole Foods bar always comes in handy when you need a good meal without any preparation. But I always overspend there! Have an awesome day!

        I could eat delicious BBQ all day long! Curious as to why you left the first BBQ place to go to the same one you had already been to!? Just because it was closer to home?

        I thought the same thing! I thought you drove 45 min back to the other place. It does look good in those pics! Barbecue is always a good choice.

    Ah, I’ve been to Ralph’s! I stopped in for lunch on the way down to SC once. Slim pickin’s in that region, but this place had the local experience I was hoping for. 🙂
