Lately

Shots from tree decorating! Last year we just got a tabletop tree, so this was Mazen’s first real one. It’s also the biggest tree we’ve ever had! You have to wonder what the toddler was thinking when his parents brought a tree inside. Excitement for sure!

I stole this idea from my friend Brett – Christmas cards on display via clothespins! It’s so nice to look up at my beautiful friends during meals, and since I took this photo our cards have filled up the whole row!

We had a really healthy week of meals that was much appreciated after the holidays got off to a great start. My goal during the season is to keep my weeks as healthy as possible knowing I splurge a little more on the weekends. Luckily this week I had no weekday parties. Next week, however, that isn’t the case!

Breakfasts

That’s one stuffed jar!! I made overnight oats in a Barney Butter jar and packed in some pineapples on top.

Next up – rainy day oatmeal made in the rice cooker! Steel cut oats in the rice cooker never turn out as good for me as they do for other people as a nice porridge (that’s the setting I use). I wonder if I’m not adding enough liquid? That must be it. Going to try again soon!

Next up: leftover sugar cookie sleigh ride oats reheated with milk and some clementine on the side.

Rushed preschool day – pear + yogurt + coffee!

Non-rushed non-preschool day – eggs, roll with butter and jam, grapes!

Lunches

A surprise visit to Great Harvest for lunch!

We met a group of our friends. Those toddlers love their free slice of bread!

Soup season is back on – I had a slice of Apple Scrapple with Rev Soup’s Spicy Peanut Tofu.

This was the Cook Smarts lentil and root veggie kale salad. Here it’s jazzed up with blue cheese!

Another day I had leftover salmon and spinach and mushroom lentils over a salad with a bit more blue cheese.

And finally – leftover Italian wedding soup! Soup for lunch is my favorite.

Dinners

We did a week’s worth of Cook Smarts, and boy did I feel organized. The meals were amazing too!

Oven Baked Salmon with lentil, mushroom, spinach ‘cream’ sauce. Loved this different twist on fish!

Kale salad with roasted root veggies and lentils with a balsamic-apple cider vinaigrette. Super healthy and on the light side, but especially great leftover for lunch!

Cumin + Coriander Chicken Tacos. I love anything topped with cheese + guac!!

Mazen’s deconstructed version got a thumbs up.

And Cheddary Shells with Broccoli and Chicken. This was so easy and really good!

Finally, we ate up the leftover orange + carrot brussels with scrambled eggs and bacon. Breakfast for dinner – sort of!

    Beautiful tree, it’s always nice to have a big one, isnt’ it? What do you have at the top, an angel, or a star?(I like an angel but we don’t have one and we have to make use of our star instead.)

    Pineapple on oats sounds lovely! And that mac and cheese looks delicious! I always love adding a little green with broccoli or peas!

    I always love your Lately posts 🙂 I always wish I could taste at least half of the great things you’ve eaten!
    One thing though, do half of the pictures come up really tiny for other people viewing the blog or is it only something weird with my computer?

      This happens to me too. Sometimes on my computer, but mostly on my phone. Reloading the page usually does the trick.

    Hmm…. now they all look fine. It happens to me on almost every one of your posts but for some reason they are all the same size now. If/When it happens again, I’ll try reloading it and see if it helps. 🙂

    The brussels with eggs and bacon….perfect combo! I could eat something similar every day of the week…I’ve been eating salmon terrine all week having made two of them one of which was a semi flop but I could let it go to waste. I’m all salmon’d out of it!

    Love the picture of the little guy with his hand raised, so cute! We do that around our dinner table too… “who loves bacon?”

    Deconstructed tacos are usually a hit around here too, especially with my guac loving boy. And I’ve been shocked that the girl who now hates mixed foods and ground meat loves regular old hard shell ground beef, turkey, etc tacos. She likes to fill them herself, veggies included, and eats the whole thing. There’s just no predicting.

    Also second the comment above, I love the lately posts and they always inspire me to find more ways to get more veggies on my plate.

    And I loved the survivor finale! So good, and a well deserved win I thought.

    I always use extra water when making steel cut oats on the porridge setting. Otherwise I end up with a thick paste.

    Brussel sprouts are a suprisingly good brunch dish! Sometimes I make a hash with roasted sweet potatoes + brussels and pair it with eggs. Delicious!!!

    I LOVE the idea of hanging Christmas cards with clothes hangers…I have limited counter space in my house so I never know what to do with my cards! Thanks for the idea! Your meals are so similar to mine…I make overnight oats ALL the time (usually for the kids) and it’s a coincidence that I’m making roasted Brussels sprouts today for lunch with some leftover sweet potatoes and a fried egg! Yum!
