Lake Austin Spa Resort – Day 3

Foodblog (4 of 4) this !

And now we have arrived at my final day at the Lake Austin Spa Resort. See Days 1 and 2 here and here!

My final full day started with another great breakfast – my favorite meal of the day!

Foodblog (2 of 16)

As I did every morning, I started with some fresh fruit, greek yogurt and ground flax.

Foodblog (1 of 16)

Plus the avocado toast with egg and a tiny blueberry cornmeal pancake!! Delicious! Since I love to taste so much, I just loved the small portions!

After having such a great spa treatment the day before (which was complimentary as part of my stay), I decided to book two more treatments on my own dollar. So I started my final day with a deep tissue massage! My body was a little sore from the previous day’s yoga, so it felt amazing. Shout out to Toby!

Foodblog (3 of 9)

After my massage I went to the steam room and sauna before my 11am workout. I had never been in such a big steam room before and it was epic! Like being in a rainforest. The steam was so thick I could barely see!

At 11 I went to try something new. The resort offers all kinds of workouts, including ones that I would normally find the most appealing – kettlebells, TRX, bootcamp. But my goals of this visit were to unwind and try new things, so I went to Nia! They actually have Nia at my gym, but I have never been brave enough to try it. I found it to be a cross between Tai Chi, African dance and modern dance. I really enjoyed it! In fact, I think this was my favorite activity of my stay : )

Next up: lunch of course! Overnight guests have the option of eating either in the main dining room or in Aster Cafe, which is the spa’s restaurant. I should mention that the Spa is also open for day visits, and people come from all around for a luxurious day. I heard a few women say they came once a month for a day of pampering! Lucky gals!!

Foodblog (4 of 16)

I tried the Creamy Kale Dip for lunch, which was excellent!! Loved it with the crackers. I actually had two of these it was so good! (It was tiny : ) )

Foodblog (5 of 16)

And then for my entree I had a Chile Shrimp Salad with cucumbers, tomatoes, olives, goat cheese and avocado. Yum!

Foodblog (6 of 16)

After lunch I ran back down to the Treehouse for a talk on Superfoods! Led by a nutritionist, it was fun to hear someone else’s perspective on eating real food. We have the same approach to healthy eating : )

After that I went back to the spa for my final treatment – a Radical Results Facial. My skin had been looking so dull and wrinkly lately, so this was perfect timing. I was amazed with how much better I looked in 45 minutes – I think the exfoliating alone did a lot of good!!

Purifying facial with face, neck, shoulder, arm and hand massage. Based on traditional European deep cleansing techniques, this treatment begins with a stimulating lymphatic massage to help remove toxins from your tissues. Your face will be cleansed with sulfate-free cleansers, toned with bio-active floral waters and gently exfoliated to remove dull surface cells. Your face, neck and shoulders will be massaged with botanical serums, and you’ll be rehydrated with a masque chosen for your individual skin.

I ended my final day with two great mind-body classes. The first was Yin Yoga set to the music of a live classical guitar. We held long stretches and breathed. And finally I went to a 45 minute meditation class. I wish I could have gone to more, as this was so relaxing. We spent the first 10 minutes on breathing and then the last portion on a guided journey through the body. I loved it!

I went back to my room to shower – LOVED the Lake House Lavender products!!

And then I met up with my friends for dinner!

To start – Melon and Prosciutto with goat cheese, balsamic caramel, pistachios

Foodblog (9 of 16)

Amador Farm Salad with field greens, dried blueberry and cherry, tofu ricotta, toasted sunflower seeds, strawberries, blueberry-balsamic dressing.

Foodblog (10 of 16)

Pad Thai with brown rice noodles, carrots, broccoli, snow peas, lime-tamari soy broth – shared with the table!!

Foodblog (11 of 16)

Lane Snapper with parsnip puree, broccolini, turnip, brown butter sauce

Foodblog (12 of 16)

Finally we had a sampling of desserts for our table to share – a key lime glass, a black and white cake, pineapple upsidedown cake and chocolate yogurt! The key lime blew me away : )

Foodblog (13 of 16)

I wrapped up my final morning with a BEAMing class – it was kind of like yoga on a cushy balance beam –

Foodblog (3 of 4)

And then had one final lunch – salad bar and this Beet + Fig flatbread with goat cheese and swiss chard!!

Foodblog (1 of 4)

I had such an incredible, rejuvenating stay and can’t recommend this place enough. What I loved most about it was there is something for everyone –

Intense fitness // Mind-body classes // Hiking // Boat rides // Pools // Gluten-free // Dairy-free // Calories on the menus // WINE // Superfoods // Burgers // Relaxing spa treatments // Healing spa treatments // Lectures // Creative classes

Whether you’re there to lose weight and detox or to unwind with friends, you’ll be able to create your own experience. If you do decide to book a stay, mention you’re a friend of Kath’s so they know to treat you extra special!!

Thanks so much to the Lake Austin Spa Resort for the wonderful mid-winter getaway. The resort invited me to stay in exchange for a blog post about my visit.

My hubby & I went there a few years ago. The place is fabulous. We each took advantage of a couple of spa treatments. Went on a guided hike and rode the water bike and even had a boat tour. Hubby took a few classes that he wouldn’t have tried at our large gym at home. We also went to several classes; one was on chocolates (yum) and one about nutrition. Very informative. i wiah I could grow a garden like the one they have. This place is first rate.
