I’m Late, I’m Late!

No time to type today, somehow the time got away from me. Probably because I decided to make an oatmeal pancake!

We don’t have any egg whites or instant oats. I sort of gave up keeping them on hand since I mostly just used them for pancakes anyway, so I exchanged them for a whole egg and rolled oats. The pancake was quite different with these changes – much wetter.  I’m not sure if I liked it that way….

  • 1/3 cup oats
  • 1 whole egg
  • 1 tsp baking powder
  • 1/2 tsp vanilla
  • 1 mashed banana (in batter and on top)
  • PB on top

But 2 minutes after sitting down I moved to the computer realizing my time crunch to blog. Bummer because I definitely didn’t focus on eating and it was gone before I knew it!

Today is going to be REALLY busy. I might not get to questions until tomorrow evening.

    hey kath are you flooded? i heard it was terrible in Charlotte.

    as a side note, i think that unless you’re a registered RD or MD then advice on eating disorders should not be given (just going off the comment from last night about bingeing.)

    Ahh, busy busy mornings before school- i know them too well 🙂

    My boy and I met at our orientation the first day of high school (our sophomore year)!! So crazy you two met at orientation too 🙂 too fun!!

    p.s. If you have the time next time you make an oatmeal pancake with rolled oats, you could grind the oats in the blender/food processor to improve the texture!

    I have a recipe for a great pancake…it is equal parts of oats (not instant), egg beaters, and low fat cottage cheese. I blend that up wiht a stick blender and it is a thick batter. I also throw in some cinnamon and nutmeg and just a pinch of salt and splash of vanilla. Cook it up in a non stick pan and then put on some PB and sugar free jam…yum. I think I will make that this morning!

    I love your oatmeal pancake recipe! But I didn’t realize that I should be using instant oats in it…I only ever buy rolled oats, so that’s what I’ve always used! Oh well, still tastes delicious to me. 🙂

    hey a couple weeks ago i was reading through the compents and stumbled across someone else’s blog by clicking on their name and i really liked the blog but now i can’t remember what the name of it was?! you live in Vancouver BC wich is cool because i live in Victoria and i was really excited to find a good blog that’s canadian so we’ll have lots of the same products ect. and also i think you’re vegetarian or vegan? and i am vegan so if you read this and it sounds like it could be your blog let me know!! i miss it lol

    I hadn’t seen it yet – until just now, thanks to Quinn’s photo on her site!! The photo of me isn’t that flattering 😳 I had no idea which one they’d choose and took about 50 of them – running, push-ups and more. But it’s so weird to see me in that format. Hopefully my issue comes today and I will scan it for you all.

    Hi Kath,
    It’s funny you had this pancake today because I just made one this morning using the recipe and tips given to me by Jenna over at Eat, Live, Run blog. It was so tasty and I had a glass of milk too.
