Happy Breakfast

To you!

I got in that Epsom salt bath last night! It made me late for bed, but it was really nice. I forget that baths are just as fun in the summer – you just have to keep the water temp down. It’s quite humid here now!

Something in me was craving toast with PB and banana yesterday so that’s what I scheduled. Nice that it was no-cook on my busy morning. But you know, no-cook breakfasts take me just as long to assemble as oats do to cook! It really should just be called "no-clean" breakfast.

This would be a Great Harvest Flax Oat Bran bun with half a mashed banana (I always mash, never slice!). One side has a heaping tsp of Nuttzo PF  and the other has about 2 heaping tsp of TJ’s Valencia. Sticky!!

I added a tiny bowl of yogurt with a little lingonberry preserves and a pinch of crunchy granola for a bit more protein.

Cafe! I made a whole carafe and left the rest for sleeping Matt to use for iced coffee when he wakes up.

This breakfast has to get me through a long morning – so far, so good!

I decided to treat myself to lunch at the hospital cafeteria today so I wouldn’t have to pack anything. No photography allowed, but I’ll be back with a recap of sorts. And you might get a surprise visit at lunchtime too!

    Yay for the bath! I hate baths myself….I just get too hot and bored and stiff!!
    Do you ever melt your bananas? Melted banana with PB…it’s like a little bit of heaven in your mouth 😀

    Pb and banana on bread is amazing combo. I like microwaving pb,banana and some cocoa, and then putting it on my bread, yum!

    I always laugh when you say teaspoon.

    I use about 3-4 TBSPS of nut butter alone at breakfast…oops 🙂

        I also always do nuts and nut butters in Tbsp.
        I find it is more proportionately fitting for my palate. 🙂
        And more satisfying.

    Love lingonberries!

    I happened upon a free jar not too long ago and now I’m hooked.

    When I cooked more meat, I made a mean glaze for pork loin using lingonberries. Now, it lives on mostly in my oats.

    Mashed banana on toast was my late night snack last night! I love how overripe bananas smooth over toast like jelly! I topped mine with a very light drizzle of maple syrup instead of PB to keep it lighter, though 🙂

    I used to love baths to take a good book and read. I actually ruined a book by dropping it in once. But now my bath tub is too small. So no more baths unless I need an epsom salt or ice bath after a long run.

    Glad you finally had a bath. They always sound nice, but sometimes feel like they’ll be too much of an effort.

    Love PB&B too, and sometimes with honey as well. Always filling and delicious.

    I’ve just started having baths in teh past week, for hte first time in years (have had surgery on my foot so can’t shower). I’d forgotten how relaxing they are! Sounds like I need epsom salts, though!

    i just noticed that you filled to the brim that GIANT mug of coffee. wow! i guess i’ve never been a coffee person at all. i love that lingonberry preserve… and the ikea food store in general, heh.

    Glad you got the bath in before bed. I am a huge advocate of Epsom Salt! Sorry you have so much going on right now. Hopefully things will slow down soon. I agree…no fair on the cleared head. I wish I could turn my brain off for a few hours at the least. As for the banana, it’s funny that we all have our rules for how to prepare things. You made a point to say you don’t slice your bananas. I have a strict rule of not stirring my oats! I like it layered so I get a little of everything in each bite!

    Do you mash the banana to bring out the sweetness or for ease so it doesn’t fall off?

    What a delicious, simple breakfast!
    I remember, when I was little, my mom would always make me “squished bananas” when I was sick, so I always get a warm, fuzzy feeling when I eat them. 🙂

      I’d recommend Dandelion Cafe (uptown), Zada Janes (Plaza Midwood) or Pewter Rose (South End)

    Hey Kath,

    I’m counting calories these days to attempt to lose those last 5-7 pounds that have plagued me. I was wondering how much your bowls of oatmeal and amounts of nut butter are for calories. Clearly, it worked for you! I’m sincerely trying with my insane schedule to focus on eating REAL FOOD. Unfortunately, I eat frozen lunch meals at least 3 days a week at school. But, for breakfast and dinner, I’m pretty good about low calorie meals with nutrients. I’m intrigued by your breakfasts and interested in knowing how many calories you think that would be. I’m keeping between 1200-1500 (net calories).

      My breakfasts are usually 400-600 calories, average 500. I gotta start the day out strong. Breakfast like a Queen, lunch like a Prince, dinner like a Pauper.
