Good Sunday Afternoon!

Hi folks! Sorry for the delay – we were busy this morning walking and then had to be at my mother in law’s by 10:30 so I didn’t have time to put the post up!

Woke up to a very nice day 🙂 (And freshly cut grass thanks to the husband’s hard work yesterday!)

Breakfast + Grocery Store Trip On Foot

After a bowl of Whipped Banana Oatmeal with walnuts and macadamia-cashew butter and coffee, we went for a 45-minute walk to the grocery store and back to pick up some “fresh vegetables from the market,” reusable bag in hand. I felt so GREEN! It was gorgeous out!

I like the taste of the new nut butter a lot (it’s from Trader Joe’s) but it’s SOOO runny that it’s not good for my oatmeal-eating technique. I think it’ll work better for toast and sandwiches.

Workout + Sandwiches

After breakfast and our grocery store trip, we went over to my mother in law’s for a short workout (ET and weight lifting) followed by a yummy lunch.

I made another classic turkey sandwich! Topped with avocado, mustard, and mixed greens – plus a little fresh basil, which really “made” the sandwich!

1/2 a cup of Fage with a cup of sliced strawberries –

And a few Terra chips and a diet ginger ale!

It was a very filling lunch. I guessed around 525 kcal based on eyeballed portions.

I’m headed to Old Navy with the bag I got in the mail where I get 20% off of everything I can stuff into it! Time for a few spring staples 🙂

    Wow, that Whipped Banana Oatmeal looks heavenly, as always; and I love the addition of the walnuts and macadamia-cashew butter!

    Kath,
    Have you ever been to Brown Bag Deli? I was eating a sandwich there today and the whole wheat bread made me think of you because it was soo doughy and delicious! They have alot of healthy options to fill your sandwich with but the whole wheat bread is DEFINITELY the best part! You should try it if theres one near you!!

    Enjoy the nice weather!

    I have the same problem with all the natural PB that I can find around here. What I do (on the rare occasions that I have any) is this: I spread the nut butter in a thin layer on top of my oats, then I carefully spoon out each bite to get a little bit with each spoonful. It’s not the same, I know, but it works ok.

    Ah.. the smell of freshly cut grass. Your grass is so green! It’s beautiful.

    I’ve never tried macadamia-cashew butter, but I’ve seen it, it sounds delicious! Thanks for the tip about the runniness. Sometimes it’s easier to spread runnier nut butter at least. =)

    Hi Kath and fellow ‘Spinners’ –

    I don’t know if you remember me asking about Spinning class last week….but you and some other readers gave me some great explanations of what to expect during Spin class.

    Well, I went to my first class at 8am this morning. OMG. What a workout! To all you spinners out there – I have such respect for you.

    I have to be honest – there were times where I thought I was going to die!

    I even sustained an injury. My foot slipped out but the pedals kept moving and it bashed me in the shin and then behind my ankle. But I put my foot right back in and kept going. I didn’t even feel the pain of the injury until I got home. It must have been all the adrenaline. I was sweating buckets!

    The other motiviational factor was the other people in the class. Wow – they were FIT! There was this one sweet lady in front of me – who realized I was new and was very reassuring. She was an older woman – but her body was in amazing shape! Everyone in the class seemed like they were regulars – they never had to sit down. I had to sit down a few times when we were in position 2 or 3…..It was so intense.

    But I must have done ok, because the older woman and the girl next to me told me I did good. It was funny because the instructor (a big guy with a booming voice – but very nice) called out my name and was like “come on! stay with me!” I couldn’t help but smile and push harder.

    I wonder how I’m going to feel tomorrow. I should have tried the class on a Friday or Saturday in case I have the post-workout pains.
    🙂 Oh well – it was definitely a great workout!

    when i got home, I made myself a nice bowl of Kath’s Classic Oatmeal, and it was SO yummy after a hard workout. 🙂

    I also had strawberries today – for the first time since last summer, they (surprisingly) looked great at the grocery store, and they tasted pretty good…. definitely not peak of summer quality strawberries, but it’s a start.

    Wow, your yeard looks so great! My husband tried to mow ours on Friday when he got home from work and it started raining halfway through. Oh well…always next week. Can’t wait for it to warm around here. Brrr…

    Your day is going to shape mine! (walk, shop, work-out, oats, hehe!) Congrats on byob to the store, I love to do that as well, you feel so eco-friendly.

    I just have a question, when I work out in the morning and then work the rest of the day (i.e. reading/writing for class) I tend to feel way lazy by the end of the day, do you ever feel that?

    Heyo Kath,

    So I’m sorry if my question has been answered already but I haven’t been able to keep up with your blog the way I used to… I mean, I read your posts but can’t always find the time to go through all of the comments.
    When you make your pumpkin yogurt, or even just eat it plain, do you count that as a serving of vegetables?
    The past couple weeks for breakfast I’ve been doing the pumpkin with plain yogurt and either mix it with some granola or a banana, it keeps me going for a while!! I just thought it was cool if I was getting in some vegetables at breakfast because usually I overdo it on the fruit…. ya know.
    Thanks, and send some of that weather up here!! We had our first glimpse of spring yesterday (Boston) and I’m jealous of all of your bright green grass and flowers!!

    yet more shameless self promotion. 😉 made callbacks for the lead role in my possible play. fingers crossed. will know this week. Heartbreaking to read about riots over rising food costs, egypt, haiti, other countries. Life is good, but these are scary times/wish there was some marked way to make a difference for people on a large scale. We are very lucky to be able to choose lovely meals/enjoy life. I’m addicted to Kashi granola, I tried it with vanilla rice-milk, since real skim milk has been bugging me lately.

    Happy Sunday to all. I have had the most enjoyable day and I must share it with you all. I got up at five to prepare for a 5k in Austin (the scholotzskys bun run) and I finished in 23:03. I am so happy. Then went to eat lunch at my favorite place, the liberty bar, and had a lamb burger. Then went running shoe shopping. And then to the grocery store. Man i’m tired. Quick que for the runners out there: has anyone tried the brooks gylcerin and does any one run with the asics nimbus? I have brooks radius and I just wanted to try something new.

    Kath, did you happen to notice the Oatmeal Honey Apple Cake in the April issue of Cooking Light? It caught my eye because it’s made with a cup of quick oats in the batter, which I think would make for an interesting cake texture. I tried to make it healthier by using whole wheat pastry flour in the batter and Smart Balance (instead of butter) in the glaze…seems like it will be a good morning treat.

    I got that same bag from Old Navy, but alas, I found nothing. I splurged a bit more and went to Banana, where they were having 20% off the whole store this weekend, so that was a fun surprise!

    Kath, this is a random question but I purchased a food scale (which I now use religiously and LOVE) at your example — I was wondering if, when, for example, you are weighing something like a banana, if you are supposed to weigh it with or without the peel. I have assumed without, because the nutritional data is only for the edible portion, obviously. Anyway, thanks for clearing this up.

    Great tip about the nut butters! I just don’t believe in stirring it in because it gets lost, but on top makes a lot of sense for runny things. Thanks!

    I do think I remember that cake – was it in the “oat special?” I don’t make cakes that much because then I have to eat them (and lick all the bowls) but if you try it send me a photo and let me know how it is!

    I got it in the mail because I have a Banana Republic card (shared with Old Navy/GAP).

    You got it – weigh what you’re going to eat. It’s a bit hard if your item has a core like an apple or chicken with bones, but you can just do your best to guess on those. Or just weigh the inside afterwards, if you want.

    Oops, can’t send a photo because I just sent most of it off with my hubby to a friend’s, but try it. It was in the “best reader recipes of 07” section in the April issue – glad to email it if you can’t find it. It WAS good. If I make it again I will try to lessen the sugar even more, because it was a bit sweet…but so moist and low fat thanks to no oil!

    The spin class was the first class I tried at this Xtreme Bootcamp gym in my area. I’m going to try the 2 other classes they offer in the next few weeks (Boot camp and Kickboxing). I’ve had experience with those – so hopefully, no more injuries!

    Unfortunately, those compression capris you recommended to me from Land’s End is on backorder until June! 🙁 I guess I’ll have to wait…..bummer…..
