Good Days End With Pie

See that ^^? Those are leaves turning yellow. HOW is it October already? Feels like ….mmm….September 1 to me.

I put my overnight oats in the microwave to take the chill off. Long gone are the days of sweating over breakfast. These were made with Noosa Coconut – yummmm!! Topped with some crumbled Apple Breakfast Cookie (recipe pending!) and almond butter.

This may be the last caprese salad I have this year. Sniff. Avocado was a great addition!

Sarah brought over some soup for our weekly dinner date. This one was packed with veggies, chicken and beans and topped with some grated parmesan cheese.

Another day’s breakfast was eggs, buttered toast and clementine (I am looking forward to apple and citrus season!)

I’m working on a few new recipes and ate them for lunch. The above-mentioned apple cookies and a steak and quinoa salad with a secret ingredient!

And finally, a totally random dinner salad when Matt was working the market late – greens, red pepper jelly, quinoa, pimento cheese, sweet potato fries. It worked!

Followed by some late-night pies from The Pie Chest while watching Survivor!! Chai Tea, Peanut Butter and Chocolate Chip Whiskey, which we heated up (my favorite!)

    That random dinner salad looks good! I love pimento cheese! My fave combo is 1/2 pepper jack and 1/2 sharp cheddar cheese. 🙂

    Mmm…I am just so happy about it being fall! I’m working on a few new fall recipes myself but I realized it was HOT when I dreamed them up and now that it’s pretty chilly this week and I’m trying to make them, I”m FREEZING…time to go back to the drawing board. 😉

    I love pie, and I don’t really watch Survivor, but have you watched ‘The Amazing Race?’ That’s probably my favorite reality show. 🙂
