Corn and Bean Dip

Fun times with Sara + Juan tonight!!! We went over to their house (our house!) to watch the game on their big TV.

But clearly the highlight was our spread of foods. I’m stuffed!

I made a bean, corn, tomato, jalapeno salad to take. Seasoned with Southwestern seasoning (so handy – coming to OpenSky this week), lime juice and salt.

AND I made Ashley’s Chocolate Greek Yogurt dip – probably the easiest, healthiest chocolate dessert there is.

Thick Balsamic Dressing

My friend Sara's sister invented this dressing in her magic bullet. It's frothy and thick and unlike a thin vinegar-based dressing despite having the same ingredients.
Prep Time 5 minutes minutes
Total Time 5 minutes minutes
Servings 1 Cup

Ingredients

  • 1/3 cup balsamic vinegar
  • 2/3 cup olive oil
  • 2 tsp agave nectar or maple syrup
  • 2 tsp dijon mustard
  • salt and pepper to taste a big pinch of each
  • Italian seasoning to taste a big pinch

Instructions

  • Blend away!

This dressing can certainly be mixed by hand, but the KEY giving it the wonderful fluffy, creamy texture is using a Magic Bullet or blender to froth it together! Will keep in the fridge for 5-7 days (and will hold emulsion!)

I ate way too much in the first quarter and then nibbled on the desserts in the third. Still full! It was a good night for sprawling on the couch. Tomorrow I will eat less!

That was actually a really good football game!! I was nervous for both teams in the end.

I thought the commercials were pretty meh. What happened to the days when each one tried to top the next with humor, wit and surprise!? The days of the Bud-wize-er frogs? Those were the glory days. Tonight’s commercials were full of obvious humor with only a few clever twists. My favorite was the Bud Prohibition one. I love vintage themed commercials 🙂

And the polar bears!? I didn’t even understand them half the time.

Thought the halftime show was OK – Madonna was good (mostly at the end), but I would have liked a lot more diversity of artists and song styles. A big mash-up.

    also – you probably saw the hundreds of comm’ls for that show i told you about “smash!” that i think you’ll love – it’s premiering tomorrow on NBC – you gotta watch it!

            The guy’s name is Andy Lewis and he’s semi-famous on the slacklining scene, which is what he was doing. My boyfriend is into slacklinging and its a crazy random sport/hobby that really tests your balance and strength. Was awesome to see it getting some play at the Superbowl.

      Smash is great! I was surprised that the pilot episode was already showing on my On Demand so I watched it over the weekend. Excellent, unique show:)

    I loved the Prohibition commercial, too – and the Volkswagon one with the dog. Half-time was okay, but my favorite part was LMFAO (my guilty pleasure)!

    Your spread looks amazing! Lots of colors, always good. And I am quite intriuged by that dip…hmm. I enjoyed the last quarter of the game especially; definitely close and exciting. As for half time, I really liked it, but what can I say, I love Madonna and “Like a Prayer” is timeless!!

    I did not care for the halftime show that much.

    I did not get to see the majority of the commercials tonight, but someone mentioned the same thing you did about the frogs from back in the day. Those were the good ole’ days!

    I definitely agree with the “I ate too much” feeling!! But that’s what you get for having delicious food and amazing company, right? Glad you had an awesome super bowl celebration (I agree about Madonna though, we all thought that her performance was lacking energy and excitement)!

    I definitely ate too much last night too – but totally worth it! Your guys’ spread looks amazing! I agree with the best commercial being the Budweiser one about prohibition – that was the best one, in my opinion.

    All of the food looks amazing. It’s so great to have friends that eat the same way you do. Whenever we go to Super Bowl parties it’s alway hot wings, pizza, and cheesy dips.

    I agree about the half time show, and the polar bears, what was up with them? I was waiting for the Coke to explode.

    Your feast looked awesome. I made some vegan mini crustess quiche cups that were a huge hit. I will post those today. I cannot wait to eat the rest for breakfast.

    Looks like a delicious Superbowl Party…the bean salad looks oh so tasty! I am going to have to try me some Pimento Cheese…everyone keeps raving about it! Hosted an Allergen Free Superbowl Party for my boys…the big treat were the Dairy, Egg, Soy and Peanut/Tree Nut Free Decadent Brownie Pops! The boys all loved them…not sure how they had room for them!

    I have that same chip/dip plate that your friend has, except I usually put the dip in the middle. Now I know what I’m doing wrong! haha. I loved the return of the polar bears, though. 🙂

    Just made the dressing. WOW. So good, so good. I made it with three teaspoons of maple because I have bit of a sweet tooth, and my balsamic is just the cheap stuff from trader joes. She totally needs to bottle this and sell it at the farmers market!
