Dust On The Bottle

Lydia and I are having a totally relaxing fun night 🙂 Unpacking took FOREVER, but I finally finished and was able to sit down and enjoy a glass of vino. We sent Matt for groceries on his bicycle while we chatted.

We could not figure out what we wanted for dinner but finally settled on taco salads.

Romaine, tomato, green pepper, tomatoes, avocado, hot sauce, black beans, corn, jack cheese and Newman’s Own Black Bean + Corn salsa – Plus lots of chips!

After dinner Matt poured a new home brew for Lydia – Summer Amber. Wasn’t my favorite, but Tusker liked it!

We’re settled on the couch and Lydia just fed me a tiny oatmeal cookie from the freezer. House Hunters in Austin is on! I’m so tired and can’t wait to sleep in in the morning.

And I’ve got a mystery guest coming ‘round 11!

    I’m traveling with my little man (he’s almost 1) tomorrow and I want to stay healthy while I’m away at the hotel.

    Hello!! With your surplus of cottage cheese I wanted to share a recipe I created after seeing your smoothie/soup creations!

    1 cup canned pumpkin
    1 oz. fat-free cream cheese
    1/2 cup cottage cheese
    1/2 (more or less) cup milk (almond, soy, or any type!)
    1 tsp brown sugar
    1/8 tsp. vanilla extract
    1/8 tsp. cinnamon
    Ice as needed
    Just blend all together, and I like to top with some cereal or crushed graham crackers!!

    MMM! Are those chips from TJ’s? They look like some flax tortilla chips I have seen before. Otherwise I really want to make a taco salad like that! For some reason you make ordinary dishes dazzle and razzle!

    Kath,

    Here is a Indian version of the Taco Salad I threw together last weekend..

    1. Chips (I took Tina’s advise from Health and made my own with tortilla’s, paprika, and salt)
    2. handful of canned Chikpeas from WF, and boiled green lentils with skin
    3. very little boiled potatoes
    4. chopped red onions
    5. a splash of Corriander chutney
    6. and Tamarind chutney
    7. sprinkle some paprika and salt
    8. serve with yogurt (so the yogurt is the dressing, but it actually soaks the rest of the items 1 – 7 and tastes yummy) and chopped cilantro
