Double Baked

I think we all had a little too much fun during today’s back-to-back bake

We baked, kneaded and bagged a whole extra day’s worth of breads to keep an edge on our supply this busy week.

Always looking for a reason to be on the blog, these guys modeled my afternoon snack of Siggi’s topped with a scuffin piece and biscotti crumbles!

Other snacks included bits and pieces of e.v.e.r.y.t.h.i.n.g. and I’m feeling kind of sickly-stuffed right now! Tomorrow I’m hoping to lean more on the fruit side of the eating spectrum.

We fed those who worked late with homemade pizza

    Don’t worry Kath: I far out-eat you on a daily basis. Wish I worked at your bakery!

    Chocolate…oh god…I eat this stuff daily. Currently eating piles of “a pot of gold” milk chocolate turtles on a routine, ridiculous basis! Didn’t know that’s how you made that babka stuff.

    Looks like fun, but I have to ask… are hairnets never worn around the kitchen, or are they just be offed for camera photo opt purposes?

      As in Most kitchens a hat is worn by most or the hair is to be pulled back. If one forgets to bring a hat or hair band we keep a hat of shame for them! We are very health conscious at the bakery!

          This was my first thought too. The girl with the red shirt has a lot of hair hovering over that dough. Not at all trying to be negative but it’s just one of my “things”.

          We cover our heads during production and if working the front counter a hat must be on or our hair pulled back. We do however occasionally take our hats off for photo opportunities, but they go right back on when we go back to work! We are health conscious and ensure that we follow standards of our health department.

            I thought the same thing about the girl in the red shirt!!!! That’s a lot of hair flowing around, even in a ponytail. I don’t need a hairnet, hats and hair pulled up are fine, but when you have very long hair like she does it might be better to put it all up.

              All I could think of when I saw those photos of the girl in the red shirt was “there’s going to be hair in that babka.” I’m sorry, but even for these “goofing around shots” she is leaning over that table with no hat, no hairnet, and her ponytail looks loose & swinging. I’m really kind of shocked that hairnets are not mandatory for anyone who is involved in food production in the GH kitchen.

                Y’all are right – it was a poor decision. But Alex is right – Ellen has thought she looks bald (which maybe was a good thing) in blog photos from the counter because of her tight ponytails and that’s why she swung it around. She actually wasn’t even working on the babka at the time and just posed, but she shouldn’t have even been next to it without her hat.

                  Funny- stuff like that never occurs to me (I understand rules and everything, but I also don’t freak out if I find a piece of hair in my food- I’ve found much, much worse) – the only thought I had when I saw her pictures was PRETTY HAIR!! 😉

    The atmosphere of your bakery looks so fun and inviting! The pizza and salad looks great too. I have been craving pizza lately but am supposed to limit dairy (cheese) due to some digestive issues. I have been trying to experiment with some non cheese homemade options but if you have any winners let me know!

    Looks like a fun crew, but I thought it was must me (before I read any of the comments), that was getting grossed out by all the hair over the dough! I bought a Savannah bar at a GH at a NC bakery last week and could’ve sworn that it had a hair in it. I would think the bakers would have to wear gloves too. No? Sorry if that’s a stupid question. I have never baked bread before, so I don’t have a clue.

    I agree with Donna, I was shocked to see people with their bare hands all over food that is about to be served to customers! Even if it was for the photo, the damage was done. I must say I don’t think I would go to a Great Harvest after seeing this.

      Hands are always washed… Many times. That is totally fine with our health department. Bakers can’t really wear gloves and get the right feel kneading dough. Bread is also cooked! Our sandwich staff washes and wear gloves and hats.
