Curious Mazen

We hosted my cousin Becky last night who is traveling from New Jersey to New Orleans to start a new job.

It was great to catch up with her if only for a few hours! Matt and I made a Cook Smarts dinner of roasted chicken thighs, orange-y swiss chard and mashed (purple) cauliflower. The cauliflower was a bit of a bust, but the other parts were delicious!! A little red wine to celebrate her visit.

Mazen loves the mat that Aunt Ellen and Becky gave him!

This morning I made French toast for all. Topped with sunbutter and extra egg batter and served with mango and coffee.

After we said goodbye to Becky, Mazen and I headed to the library for a visit with Curious George!!

As much as he loves George, this was as close as he ever got to him.

There were lots of other activities for the kids too though – all George themed!

Next stop was the gym for a very late and very quick workout for me. 26 minutes on the stairmaster, shower, done. Mazen had his lunch there in the Kidszone with Sylvia, and I ate when I got home at 1:30 starving! I had had a few animal crackers at the library, but nothing else so I ate this burger in 2 seconds. Our fridge is also very empty!

Leftover black bean + quinoa burger on a Honey Whole Wheat roll with pear on the side.

    I love that you take Mazen to the library! I have such fond memories of going to the library as a kid but, far too often, it seems to be overlooked these days… ah, I feel old ;).

    And that french toast just triggered a major craving – one of my favourite breakfasts!!

      I don’t I cooked it quite long enough and added too much milk because my head was small. Follow the recipe exactly!

    Question. I <3 your food photos, and how do you get them to be so pretty? Do you mostly use natural light or do you add room light?

      Thank you : ) I use mostly natural light. I only occasionally use artificial lights during my dinner posts – mostly for special occasions!

    Purple cauliflower mashed potatoes whoa! I tried growing purple cauliflower in our garden last year, the lovely green bugs got to them 🙁 my regular cauliflower grew beautifully though! Curious George is one of my children’s favorites as well.

    Mashed cauliflower is so hit or miss. Sometimes the cauliflower can be watery. Looks like you had an awesome time 🙂

    Hi Kath,
    I love that play mat that your Aunt & Cousin got for Mazen – do you know where it’s from? My 3 year old would have a great time with one like that 🙂

    I have to ask about your French toast, since you enjoy it a bit differently that I do (I had some with butter & syrup this morning). I’ve never tried it with nut butter on top – did everyone else have that too?

    That Bosc pear in your lunch photo looks great – thanks for the reminder, those are one of my favorites.

      Thanks! We really liked the name Mason but my husband’s last name is Monson so we figured that was too many ‘Sons. We decided we could change a few letters to get a new name ending in -zen. We get a lot of compliments on it!

    We made the same Cook Smarts recipe last week too. It wasn’t our favorite. Whoever said mashed cauliflower tastes like mashed potatoes is lying. After we ate my husband said the meal was terrible and he just forced himself to eat it. The chicken was great but the two sides weren’t a big hit for us. Oh well, you win some and you lose some!
