Crunch!

After a lazy afternoon of reading, napping and lounging, we contemplated what to make for dinner. My Twitter friends were very inspiring! But we settled for a simple meal of my very favorite foods:

Kale

Sweet potatoes

Beans

Sharp cheddar cheese

Greek yogurt

[Where are the oats, pumpkin and peanut butter!?]

It was an AMAZING combo. We simmered the beans in some BBQ sauce that got thick and syrupy. The potatoes were baked in the oven for an hour at 400* after being rubbed in olive oil and salt.

The cheese + yogurt + sweet sauce + cinnamon was an excellent combo.

Of course the kale was great – so I made a video!!

Crunch!! The Brain [Andrew] loved them.

    Okay this is so gross, but I don’t ever wash my kale first. I always thought it would be too wet but never thought to add it to the spinner. Brilliant!

    Hi Kath! Started reading your blog a few weeks ago and this is my first time commenting! I have to admit I’m still trying to catch up, a bit backlogged on all the entries (I think I’m on August 08 right now?) but love all your meal creations. 🙂 Tried Greek yogurt for the first time recently and looved it, but I haven’t been able to try it with savory items such as cheese yet. Definitely will give that a shot when I can! Thanks for the posting and keep up the good work!

    I’ve never made baked beans before but now I feel like I must! It looks so yummy combined with the sweet potato! I also love your kale chips video, I happen to burn my kale chips 50% of the time :-(.

    Kale and sweet potatoes are so yummy together. I like to steam my kale and drizzle a dressing of oil, apple cider vinegar, tamari, and Bragg’s over top.

    You can use any kale for chips, but the curly kale is the best, I think. I grow three kinds in my garden, but that is the one I always pluck for chips!

    Cute video but I have to confess that I don’t like kale chips! Maybe I made them ‘wrong’ but they were so crispy, it almost felt like a knife cutting my throat and were, at the same time, crazily chewy…

    I love sweet potatoes and I was trying to convince my husband today that sweet potatoes would taste great with some chili on top – he disagreed!

    Delicious looking dinner – sweet potatoes are one of my faves.

    I tried a sweet potato w/ baked beans for the first time tonight while DH had steak. He thought I was crazy, but it was really good (and now I have to show him the pic of your dinner). I sprinkled the beans w/ hot sauce. Now I just need to make the kale chips which I’m sure I will love since I like kale in all other forms 🙂

    I can’t believe I have never tried kale before! Ive heard so many raves about it, but for some reason it still intimidates me. It really is time to branch out, it seems like everyone on here loves it. lol Your dinner looks delicious Kath!

      It would have to be a really stiff green like kale. I haven’t tried it with others, but I bet it would work for some – perhaps mustard greens?

    My roommate and I decided that Rev Soup was like a snooty boulangerie (sandwich shop/bakery) in Paris… bad service, closed whenever they feel like it (e.g. after 8 pm and every Sunday, in Rev Soup’s case), but the food is so good you can’t help but go back. It’s frustrating, but worth it.

    Hi Kath,
    I have loved reading your blog – thank you for sharing all that you do! As a dietician, do you have any ideas of where I could get resources for someone experiencing weight gain as a side effect of medication? The medication is Zyprexa… I’m not sure if its effect on weight is due to water weight gain, a slowing of the metabolism, or increase in appetite. I’m hoping to design a simple, not too expensive food plan. Thank you so much!

    Cute vid 🙂 So… everyone on blogs seem to be makeing/loving kale chips so I was excited and made them a few weeks ago – but the flavor was SO strong… I tried them with ketchup the way you eat them and they were way better but I’m not a ketchup fan… so I tried mustard… 🙁 Anyway so do you love kale steamed?? do you like the kale taste or are your chips not that kale-like??

    That looks delicious! If only I could find kale over here… Maybe here in Spain is just not used, so they don’t sell it? It’s the exact same thing with rhubarb. I eat tons of it when I’m abroad so I can compensate for the total absence of it here.

    I just can’t stand kale! I tried making these chips and they would taste GREAT at first (my seasonings are awesome) but then the aftertaste was absolutely awful. Just not for me!

    But I tried roasted kohlrabi this weekend and it was amazing!

    I made the kale chips last week according to your recipe, and they were way too salty! I’m glad I got to see the video today. I definitely added way too much salt. I’m going to try again this week and see if they pass the hubby test. 🙂
