Change Of Plans

Had a slight change in my lunch plans today.

One of my coworkers brought in freshly baked Pineapple Orange Cupcakes!! Saved my kiwi and had a tropical delight in the form of cake instead. The icing was fabulous! Just whipping cream, pineapple tidbits and pudding mix whipped together.

So for afternoon snack, I ate the furry kiwi and a few nuts on my way to yoga.

Er, NOT to yoga!!

Change of plans – I couldn’t bear the thought of going on a walk and to yoga without Emily AND "wasting" that hour when I could get in a quick workout and have time to spend with Matt, so I came right home and went RUNNING!

In addition to my kiwi and nutz, I had a few swigs of this guy before I left:

5.5 miles!! I can run again!! I was slow and a bit stiffer than I used to be. But I’ll build back up.

  • Roasted sweet potato (a HUGE long one – half for each of us)
  • TraderJoe’s Baked Beans
  • Roasted Fennel + Broccoli

[No, those aren’t onions!]

I went at it with a grapefruit spoon and just ate the sweet good part off the top 🙂 [We’re going out of town and have TWO of these to eat up!]

    Changed plans can be good. The cupcake sounds yummy! I have not tried the sweet potato baked bean combo yet, but I need to. It just sounds good! I have also been working my way through a watermelon since I can’t bear to throw anything out! Enjoy your evening!

    I’ve made a sweet potato black bean soup before and never even thought to just eat it like you guys did. Your dinners always look so simple yet delicious. I think I’ll try that sometime for an easy meal.

    p.s. I’m so jealous you have watermelon, looks mouthwatering.

    Have you ever tried dry toasting your oats in the pan before cooking them? Adds a little extra flava

    I wish I could do handstands like you! I’m a whimp when it comes to inverting myself. I’m still working on the yoga headstand for now…but maybe one day, I’ll build up the nerve to do the handstand!

    I love how you get into a handstand! I’m was a gymnast for a while and cartwheeling up always felt awesome cause you have to use your abs to stop you from rotating over. Hehe I’m such a gymnast dork 🙂

    Silly question I know – but how do you cook a whole sweet potato like that? Wrap it in foil and stick it in the oven? I’m sure i’d end up burning the outside, or it would still be crunchy inside…

      Matt cooked it but I believe he just put it on a sheet pan and baked at 350* for about an hour.

    Impressive moves! I can do a cartwheel still, but not so sure about the handstands – except it the pool of course. 😉
    Hooray for fruit season. I’m most excited to buy cherries, but the watermelon looks pretty delish as well.

    What kind of camelbak (or other brand) do you use? I’m training for a half marathon and my runs are getting long enough that I need mid run water/fuel. I really want to get a pack but I’m not sure what kind or how big or what? Any advice?
