Breakfast In Bed

Somebody needs to drink more mindfully !

After guzzling some coconut water in bed, I stumbled down to eat some breakfast. I couldn’t decide what I wanted. I didn’t have the energy to make oats but it was too cold for a smoothie.

Yogurt bowl it was! I think this has been named “un-overnight oats” in the blog world. I mixed all the staples for overnight oats but didn’t let them sit – which meant they were good, but not nearly as doughy as if they’d soaked overnight.

The Mix

  • ~1/3 cup Ambrosial muesli
  • ~1/2 cup plain yogurt
  • ~1/3 cup milk
  • ~1/3 cup pumpkin
  • Half banana
  • Tbsp chia seeds
  • Hemp Plus granola
  • Naturally Nutty PB

As I’m sure you all know, the earthquakes in New Zealand and Japan have been devastating. A group of Kiwi bloggers [and KERF readers!] emailed me about a virtual 5K they are doing this weekend. Run a 5K in your town, and donate $5 (or more) as your ‘entry fee’ to their fundraising page. There are people all over the world joining in!

I’m hoping to cover my 3.1 in a combination of running, walking, biking and yogaing this weekend. And I’ll be doing it in support of both New Zealand and Japan.

A red and black breakfast this morning in their honor.

    I am so interested in trying coconut water? Is it good for anything? Or just electrolite replenishment? Also, what is tbhat bleu cheese you love from WF? I am making a trip to cville today and want some! 🙂

    Kath the 5K is a great idea – I hope they are able to raise a good amount of money for the Red Cross!

    Do you sleep with an eye-mask? I’ve thought of getting one since I prefer total darkness at night, but I didn’t know how bothersome it would be.

    I love the 5k donation idea – such a horrible tragedy.

    Hope you’re feeling better. I too need to remind myself once in a while to drink mindfully (and for me that would be less wine/more water) but I often forget in the moment.

    Questions:

    1-Do you know of any bloggers who are both wheat free (or gluten free) and dairy free? I’ve been off both for 3 weeks and need ideas.

    2-Keeping wheat and dairy out, is there an overnight oats combo you can come up with that includes almond milk, but no yogurt or cottage cheese?

    3-My daughter is toying with the idea of becoming an RD (at this point she’s a senior in HS). Any tips or could she even email you at some point if she’s really serious?

      I don’t know of anyone off the top of my head who doesn’t eat either of those. A gluten-free vegan would, but I don’t know anyone’s diet well enough to recommend.

      I think yogurt is really key to a great overnight oats consistency, BUT the chia seeds really help with thickening, so you could use gluten free oats and almond milk with chia seeds for a similar effect.

        I’m trying to blog lactose free as well as gluten free now as I have just been told I am lactose intolerant!
        Feel free to check out my recipes which include some cheese, but mostly lactose free Cabot cheddar! 😉

      Not trying to butt-in here, but Angela at www.ohsheglows.com MAY have some recipes 🙂 I know she’s not entirely gluten-free, she is, however, vegan! There may be a few recipes!

      why not use a dairy-free yogurt? i LOVE coconut milk-based yogurt but there are also soy versions as well.

      Agreed with Kath on the Almond Milk. I always make her recipe of oats but use Almond Milk instead and I like the flavor/consistency a little more. I find that Almond Milk has that taste of milk leftover in the bowl after you just had your cereal. Anyone else with me on that one? haha.

    Coconut water and a multivitamin in the wee small hours of the morning have been my salvation more times than I can count 🙂 I also have a friend that swears by Pedialyte for recuperating from nights out.

    I seriously drink a beer or glass of wine about once a week. Last night I had two 22 ounce light beers. I went to bed at 9:30 with a headache, I woke up feeling parched, looking mirage in the desert, and am now drinking loads of water and some STRIS-ONG coffee.

    Love the 5k idea! So creative! Oh and coconut water makes me feel amazing….I love the taste and the electrolyte boost it gives me! Have you ever tried the Vita Coco brand?!?! It’s no sugar added and comes in so many amazing flavors!

    Whenever you describe a bowl of oats as *doughy* (even though I know this bowl of oats you had today was not…) I immediately want to run to the kitchen and throw some overnight oats together and stare them down and wish them to become doughy in point two seconds. Seriously. LOVE that stuff!

    A good friend of mine lost her house in the earthquake here in New Zealand, and, far worse, a friend of *hers* lost her baby son. The devastation in both Christchurch and Japan just lost catastrophic, so thank you for spreading the word about that! 🙂 It’s an awesome thing that they’re doing. A lot of families need all of the help they can get!

    Also think of the peeps in Australia who suffered devastating floods not long before NZ’s terrible quake. 75% of the state of Queensland has been declared a disaster zone – I’ve driven down neighbours’ streets and seen it first hand!
