    I love all the mix ins! Question though… How do you stay in control of calories when you mix all the ingredients? Do you measure each one out? I’d get carried away with a little of this and a little of that.

      I guess I think of my breakfasts in parts:

      the dairy (yogurt, milk)
      the base (oats, cereal)
      the fruit (bananas, berries)
      the garnish (granola, jam)
      the fat (most often 1 tbsp of nut butter)

      I know from experience that this comes out to about 500 calories, which is less than 1/3 of my daily needs. Sometimes I have more base, less topping. Sometimes it’s the other way around. But most of my breakfasts include some ratio of the above.

    gosh kath. this is PROBABLY the most amazing-looking breakfast i have ever seen. seriously. as i was eating my eggs with spinach and bread this morning, i of course came to KERF to see what you had for breakfast this morning. and i was immediately jealous.

      Both texture (crunchy on top, gelled when cooked inside) and nutrition (omega-3s, protein, fiber). They are just like flax seeds, but actually have less flavor. They are pretty flavorless.

    Hey Kath,

    When you make your oatmeal…when do you add in the chia seeds? (right at the beginning or when it starts to thicken up?) I’ve noticed when I add it right at the start my oatmeal is gummier but when its added when it starts to thicken its a nicer consistency.

      In the beginning. That helps them gel the most. It is a bit gelled in texture, but I like it that way to get the maximum volume.

    YUM! This looks like the BEST breakfast. I love bananas with blueberries and grains. I think that is an amazing combination. I’m going to try this dish. Thank you for the ideas.
