Banana Wha!?

Thank you to Caitlin for inventing the grilled banana sandwich! Why did I wait so long to eat this glorious dish?

We had two smallish pieces of Flax Oat Bran left, and because I am kind to my husband, I shared

Followed Caitlin‘s instructions and just dipped the bread in egg and then skillet cooked till golden. Had my naners going in another pan.

Why do we not "grill" or "fry" or just caramelize bananas more often!?! With just a little cooking spray this was done in 3 minutes. Oh I know, cleaning the pan…

But because I am anything but simple, I had to amp up the dish and used her Autumn GBS recipe instead. Topped with a pumpkin cottage cheese mixture, a drizzle of TJ’s PB and a few cinnamon almonds.

Check out that grilled banana!! LOVED this. So did Matt! Next time when I have more bread I’m going simple and actually going to make a sandwich that I can pick up. Maybe we should start French-toasting ALL sandwiches!?

    I have never grilled or cooked bananas either. Likely because I don’t want to clean up a pan either. LOL Or I just don’t think about it until it is too late.

    Looks like a super satisfying breakfast.

    I found a Great Harvest in my area yesterday and was soooo excited to try the Flax Oat Bran since seeing it all over your blog. I was SO BUMMED because it was on the board but totally sold out! I ended up with honey whole wheat instead. I have yet to try it, but I’m loving the density of the loaf already!

    Yes, this is a genius dish! I love how you made it all special and fallish. Sometimes I do consider French toasting all my bread for sandwiches and then I remember that some things just don’t go with that…..like hummus.

    Hi Kath — I have been making the following (portable!) breakfast sandwich for my teenager to take with her to school. I make a sandwich with peanut butter (or almond butter — whatever sticky protein spread you like, really) and banana slices on a good, whole-grain bread. Then soak the sandwich on both sides in an egg, beaten with a tsp. of milk and a tsp. of maple syrup. Sometimes I add cinnamon or nutmeg to the mix. Then I put it into my panini press, and it’s fabulous — brown and fragrant, warm and oozy inside, but dry and firm outside. Of course, you could simply brown it on a griddle or in a skillet if you don’t have a panini maker. Delicous!

    You can grill bananas with less mess by putting a piece of baking paper in the bottom of the fry pan, than just cooking the bananas on top of it. No pan to wash up after! 🙂
