A Glad + Sad Day

Some highlights from the Summit – I had such a great time 🙂

I was in charge of meal planning and we had a great spread of healthy foods –

  • Arnold breads / Sandwich Thins
  • Spring Greens Salad
  • Quinoa + Edamame Salad
  • Garbanzo Bean Salad
  • Applegate Farms Organic Deli Meats + Cheeses
  • Roasted Veggies
  • Marinated Tofu

It tasted DELICOIUS!

I got a pile of salad, fruit, quinoa, roasted veggies and a sandwich thin stuffed with tofu and more veggies. Anyone who doesn’t think veggies are delicious needs to borrow my tongue!

I actually LOVED the long Arnold Sandwich Thin. It was long and fluffy and sweet and thin enough for the flavors to come through. I am a total bread snob, but this got a thumbs up.

INTERLUDE

I received some very sad news this afternoon. I lost my grandfather, Pop, this weekend. He was 92 years old and smart as a whip (still went to work most days of the week!) and passed away peacefully during his evening nap. It was tough to go on with the day (my mom was saving the news for my return home) but alas, the news leaked in the family tree. More reflections to come…

Emily and I had plans for yoga tonight, but we decided to go on a long lakeside walk instead. The walk really helped – we strolled for over an hour. It was nice to just relax and talk for a while.

In-between sniffles, w joined back with the group and ventured back out to our planned dinner with Miss Oh She Glows.

In Pop’s honor, I got his favorite drink: A Manhattan, extra sweet.

I also devoured this mini bowl of truffled popcorn! Best popcorn ever.

Tina noticed my glass was empty and bought me a glass of wine!! She sure knows how to live it up 🙂 I didn’t quite finish it, but it was a great Chard.

To eat I had the Foraged Mushrooms with Fava Bean Puree. AMAZING. These were the BEST mushrooms I’ve ever had – you could have blindfolded me and told me they were beef tenderloin and I would have believed you!

Emily got “fried chicken” made from seitan and tofu – which was surprisingly really delicous.

We wanted dessert, but we didn’t have room or time, so we passed and somehow I’m still up too late. It’s been a long [sad] day and I’m ready to get home to my new home to unwind a bit. I’ll be traveling again on Tuesday.

    I’m so sorry to hear your grandfather passed away. Glad you had good friends there, and will be with your family soon. I lost all four grandparents over 2 years and it was very sad. But what a wonderful, long life he had! And, most importantly, lots of time with you. 🙂

    Saw Pop just before… visitors had just left, he pet his dog, great conversation–full of encouragement and advice and a great big kiss. He seemed happy, which was, well, I guess just himself… he certainly lived his life to the fullest every day—including working everyday and proud of it! I’m sure his ‘work’ family will also miss him as much as his family and other friends will. He was truly a significant part of my life and I am very sad.

    I’m so sorry about your loss. My grandpa passed away this past October right on his 93rd birthday. Thinking about you girl. Wish I was there for a walk along the lake…I could use a good walk with girlfriends! 🙂

    It’s never easy to lose a family member. I pray that peace is with your grandfather and the rest of your family. You’re so strong for being able to finish the day with such grace. You should take a bloggy-break if you need some time “off” – we would all understand and support that!

    I’m sorry to hear about your loss. I, too, lost my Poppop in April and it continues to break my heart. Like your Pop, he lived a quality life until his passing. It was comforting to know he always had his independence and the home he raised his family in. Now I have a new home and after inheriting tools for the garage and kitchen gadgets and his amazing collection of gardening books and Chinese philosphy and culture books, I see him all over my house every day. I love his presence but I miss him so much. I’m so sorry for your loss Kath. XO

    To end on a positive note, The Happiness Project is such an amazing, life-changing book! For those of you smart ladies (and men!) who’ve never read it, it’s awesome. Totally wouldn’t be a waste of time to sit down with it. 😉

    Can’t wait to read Larbs’ blog, by the way! Oh, and Kath…can I borrow your tongue? Because stomaching my 5-9 vegetables (and fruits) a day is a pain in the butt! 😛

    I’ve never lost a grandfather, but I can relate to losing a friend.
    A loss like that usually pulls a family even closer in the end.

    Aww, I’m so sorry for your loss! When I lost my grandfather it really was one of my saddest moments. I had never lost anyone that close to me and he was really one of my hero’s, and still is.

    What a huge success on the Summit.

    I hate to hear that such terrible news came during it though. My G-Pa is 89 and has such a zest for life. I can’t imagine losing him so I know you must be feeling great pain. Thank goodness for great friends who know how to give you the company you desire and the peace of a walk.

    I’m so very sorry to hear that your precious grandpa passed, Kath. He reminds me a bit of my late Pop and we had a very special bond as well. These events remind us to hold those we love close to us and not take our time with them for granted. I wish you and your family peace during this sad time.

    I’m sorry to hear about your grandfather. He sounds like a great man. I just lost both of my grandfathers in the last five months. Just remember the good times! What’s helped me is bringing some of their best qualities into my own life on a daily basis. It’s as if I’m keeping their memories alive. May his memory be eternal.

    I am so sorry to head about your Pop. Oddly enough, I knew him! I’ve been reading your blog for a while now and imagine my surprise when I saw your picture with him. I work in Baltimore at the same company and he popped in our office all the time. He was truly famous around here and he always talked about his love for Duke! He will surely be missed.
