Followed by a warm welcome home with an over-the-top meal and hot back-to-normal husband!
Dinner was on the table – perfect timing for my delayed flight to arrive!!
Homemade Butternut Squash Gnocchi with Sautéed Sweet Kale
Matt followed Alton Brown’s recipe to a T – butternut squash, potato, flour, sage plus Parrano cheese. He says you can find the recipe online (and that it’s rather time intensive but totally worth it!)
It was amazing, especially after coming home from a looooong day of traveling and snacks.
On the side we had sauteed kale in apple cider vinegar, agave nectar and garlic. A HUUUGE pile to get some more fiber back in me!!
I didn’t finish the whole bowl and intentionally saved about 1/3 to pack for tomorrow night’s dinner!
Glad to be home with my gentlemen! (And my GOSH how much I love this computer!!!!!!!!!!!!)
I also came home to a CROCKPOT sent to me by reader JOY who had 3 from her wedding and offered to give me one. Thanks so much Joy!!!
Also found some new tubes of Mix My Granola. They sure like keeping my supply flowing!
The mix this time is HALLOWEEN inspired – candy corn, peanut M&Ms, hazelnuts, apricots and organic granola. I had a little handful for dessert!
I am off to take the bubble bath I have been dreaming about since about 2PM. I need to SOAK! Hoping to do a little YogaDownload when I’m done. And hoping to smell like the EO products I picked up at Foodbuzz!
Guesswhat!? No more traveling [with the exception of one overnight trip to my parents'] until Christmas!!

I have that same crock pot and it is phenomenal! My husband makes corned beef and cabbage for him, I make chunky ground turkey and zucchini tomato sauce for me. You can really just let it bubble away all day and it turns out delish

just wanted to let you know- i tried kale chips yesterday using your method and absolutely love them!! i really do not like vegetables with the exception of carrots and spinach, so this is a great way to get some more (very nutritious one) in, thanks!
The butternut gnocchi looks great! I’ll be trying a locavore version of this, with butternut squash from a local farmer, potatoes from our garden, and sage from our window box. Fortunately, my hubby has some experience making gnocchi. Perfect recipe for fall!

My boyfriend made me gnocchi after my half-marathon, it was the best! We have made gnocchi with sweet potato but never butternut squash….that looks unbelievable (especially with the greens). YUM!
