This refreshing summer salad is all chew from wheatberries and naturally sweet from ripe blueberries and raspberries.
One of the best salads I’ve ever made!!
Triple Berry Salad
- 1 cup hard red winter wheatberries, cooked until tender per package instructions
- 1 cup blueberries
- 1 cup raspberries
- ~4 oz soft goat cheese
- ~1/3 cup cranberry pecans (or candied pecans or just regular pecans)
- ~1/4 cup chopped almonds
- Big handful baby spinach
- Dressing: Shake together the juice of a lime, 1 tsp honey, pinch salt, 2 tsp olive oil
