Apple-Cheddar-Bacon Frittata
Ingredients:
- 1 slice bacon
- 1/2 large apple (about 1/2 cup chopped?)
- 5 eggs
- 2 tbsp milk
- 2 slices swiss cheese, diced (or just use shredded)
- 1/2 cup shredded cheddar cheese
- Pinch kosher salt
- Preheat broiler.
- Chop bacon into pieces and brown. Halfway through bacon cooking, add chopped apple and cook for several minutes until apple softens.
- Mix eggs with milk, cheddar and salt. Pour over bacon and apple. Cover with swiss cheese.
- Place frittata under broiler (in safe skillet!) for 3-5 minutes, until brown and bubbly.
- Makes 3 servings, each about 300 kcal, or 4 servings at about 225 kcal.

We made this for breakfast this morning, and it was SOOO yummy! Good one!
I have made this a few times – kept with regular cheddar, added another peice of bacon, and sometimes up to TWO granny smith apples (sometimes they are small). I LOVE LOVE LOVE it. I feels….so naughty even!! Hahaha. Served with a side of rustic toast/bread, with fresh mango for dessert, usually. Have even cooked this when I had guests and served with sparkling wine! It rocks!!

made for dinner tonight for me and my two kiddies (age 6 and 3, both of whom gobbled it up!). Thank you for a great frittata recipe. I make frittata’s at least once a week now, so it’s great to have this as a go-to recipe, b/c it’s usually ingredients I have on hand anyway!
Didn’t have any bacon, so I subbed 1\3 of a link of sausage & cut it up into tiny bits. It came out de-licious! Mm!
I made this on Saturday night. I used Canadian bacon instead because I had some and it was great. However, I used a golden delicious apple but would prefer macintosh instead. It was so yummy and nice to have breakfast for dinner.
