Kale Chips

Kale chips rock!!! They are just like chips. I put a good bit of kosher on them to make them kind of salty like fries/chips. They really were like thin potato chips!

Rough Recipe:

  • Preheat oven to about 375*
  • Use about 1 OXO salad spinner’s worth of kale (which was a stuffed grocery store veggie bag). Tear the leaves off the thick stems into bite size pieces. Spread out on cookie sheets.
  • Drizzle with about 2 tsp of olive oil
  • Sprinkle with Parmesan, Asiago or your seasonings of choice. Plus a sprinkle of kosher salt.
  • Bake for about 15 minutes, until edges are brown and kale is crispy when moved in pan.

Just tried the Kale Chips for the first time this weekend. I followed the recipe exactly and they were YUM!! Amazingly delicious. I used sea salt and parmesan cheese on them (not stingy on the salt so they were pretty salty!). Almost as good as actual potato chips, IMHO, for waaaay less calories. Wow! Thanks Kath for the recipe!

I’m new to your blog but love your taste in food (no pun intended!). I had some kale kicking around so tried this, not really believing that kale could taste like chips. HOLY COW! These are great! I over-oiled mine a touch, but they’re still great. Thanks for the recipe, I’ll make this again and again I think – especially in the winter as I’m a local food eater!

wow. i am so excited about finding this recipe! i tried it with red kale and regular kale, the regular being much better (thicker). i just did simple sea salt and some sweetness, and sprayed the batch with olive oil spray. thank you so much, i gave them to my father who is a potato chip lover, and he liked them a lot. im so thankful for a healthy alternative for him!

Saw you on current tv today and I am a big fan of kale … I have grown it for years! I have had plants survive for three years, even thru our northern winters! Sadly we moved and I do not have a veggie garden for the first time this year … BUT never had thought about making kale chips! Always liked when they were the base for fish and the edges sticking out from under the fish would crisp.
I also find steaming them ever so lightly with a vinegar water solution is good also. Soon as the water boils, turn off and remove from stove top if electric, just leave lid on for about 1 min. I do the leaves whole with a short stem left.
Plus Kale is a BIG liver detoxifier.

OMG! These are awesome!

OK, they’re not like ‘chips’ you can’t use them to pick up dip. But they are crunchy and thin, and if you use the salt and cheese they’re salty and cheesy. My son loved them and my daughter ate a few. My husband said they were good but didn’t go back for seconds. He said they basically ‘disappear’ when you eat them, which was my impression also. So I ate about a bunch of kale all by myself eating these.

That was *so* cool! Love this recipe, thank you!!

I recently started making kale myself. I’ve made it all the traditional ways and just tried you kale chips. They are AMAZING! Though I added a bit too much salt. I’m even eating them with ketchup as we speak!

I’ve been drinking kale and v-8 blended together, but I don’t like it if the kale gets too pulverized. I’ve been looking for a new way to eat kale. this is perfect. I’m going to try it tomorrow.

Yikes! I think I must have over-roasted them (although it was only 14 minutes at 375) because they mostly tasted charred. Liberal dunking in ranch dressing helped.

I love the concept because kale is one of the Good For You foods that I don’t really like. Next time I’ll try baking them less vigorously.

the best way to make kale chips is in a low temp. food dehydrator – excalibur is the one i use. make a sauce in the blender with nuts, water, garlic, dill, lemon, nutritional yeast (cayenne if you want it hot:) and celtic salt. put the washed kale in a zip lock bag, pour some sauce on, close bag, shake. put in dehydrator overnight. awesome!

I tried these last night and burned the first batch. These little guys just do not like being overcooked.

The second batch was more successful and waaaaay tastier. I still burned a few so next time I’ll shave even more off the cooking time for my oven. DH didn’t care for them but agreed to try them again next time; my 8 yo eagerly tried one but quickly spit it out. I wish she’d tried one of the less burnt ones!

It’s all a process. At least we’re trying!

WOW!! I was so pleasantly surprised at how GOOD those are!!! I took chips out of my diet as a general rule over 5 years ago (though i will occasionally indulge less than once a month) but these kale chips were such a welcome and tasty treat! Even my husband (who doesn’t like healthy foods-in-place-of-junk-foods normally) was like “I want to dislike them, but I really don’t! These are great!” Thanks for posting the recipe :)

hi kath. i’m wondering if the same could be done with other vege. cos i find it hard to find kale here in malaysia. They only have chinese kale, which looks totally different. would curly endives work?

Jac,
It might work with another tough green – like collards or perhaps the Chinese kale you’re referring to. Probably not a more tender green like spinach. Let us know if it works!

I’m sorry, these sounded really good! I washed and dried the kale, put EVO and salt on it and cooked it. I made sure every piece was nice and crispy . I could eat a few but the taste of the kale overwhelmed me, not at all like potato chips. I really need to find some other kind of seasoning, no one in my house could eat it.

DW and I are trying to ‘go vegan’ and snacks were a question mark for us … so I have the first batch (regular salt, olive oil, onion powder and a TINY sprinkle of Parmesan) in the oven right now. Even if they aren’t a complete replacement, they are a start. We (I, actually) don’t expect them to be EXACTLY like potato chips (duh … no potatoes!), but they should be a good addition to kale in creamy colcannon (kale, potatoes, vegetable broth run through a blender).

The Parmesan isn’t on the official list of ‘good’ foods, but we have less than half a jar left, it’s already bought (yada, yada), so I thought I’d just keep using it until it’s gone.

Besides … I like the taste of toasted Parmesan. ;-)

salt is unhealthy did you check the sodium content? Substitute salt with something sour like Aamchoor- much healthier.

I made these today for the sole purpose of snacking on while at work this week. Very yummy! I’ll have to pick more kale up this week and restock them. I ate half of the tray…testing them when they came out of the oven and then more testing to see how the held up in a ziplock bag. After an hour they were still tasty!

I have some left, hopefully they’ll take me through at least Tuesday!

Only difference I made was I cooked them until they were totally crispy and crunchy…which was actually closer to 25 minutes. Although it probably would have been less time if I hadn’t packed the tray.

ooh I finally got to make these last night (kale seems to be hard enough to find around my neck of the woods which baffles me as it’s an ingredient in a pretty traditional Irish dish. Finally got around to trying these. I liked the crispiness factor and mouth feel, but the flavor was just okay. I REALLY want to like kale, but just can’t seem to find any recipe that does it for me!!! I’ll likely eat them again just to get the nutritional benefits and have a break from the proverbial bowl of salad.

Kale chips are delish, and raw Kale is yucky, but Lea, Yes nutritional value is compromised whenever you heat anything above 120 degrees because it breaks down the live enzymes and amino acids.

I finally tried these today… actually I’m still eating them now. I had to comment immediately upon trying. I was pretty reluctant, but these are fantastic. I was so surprised how crispy they really are. I’m also dipping them into ketchup since that’s what Kath does!

Wow, I have to say that these really surprised me! I only did olive oil and salt on mine and shockingly, they are very similar in taste to potato chips. I expected to like them, but I thought the “potato chip” claim I’ve been hearing all over the place was a bit exaggerated! What a great way to get your greens!

Hi Kath,
I’m wondering if you have tried MaraNatha Choc. almond butter? (they call it spread, I guess because it has evaporated cane juice and oil added). I live in Ashland Or where its made. If you can’t find it I’d be happy to send you a jar :)
I’m also wondering if you have tried oat bran in your oat pancakes. More protein and fiber for less cals.
