Greek Tuna Salad

This Greek tuna salad brings all the best mediterranean ingredients together into a fresh and protein-packed lunch.

Ingredients

  • 1 can tuna drained
  • 1 tbsp mayo
  • 2 tbsp Greek yogurt
  • Juice and zest of half a large lemon
  • Half a bell pepper diced
  • 1/4 cup pitted Kalamata olives
  • 1/4 cup fresh parsley chopped
  • 1/4 cup crumbled feta cheese

Instructions

  • Drain tuna and flake into a mixing bowl
  • Add mayo, yogurt, lemon zest and lemon. Season with salt and pepper to taste.
  • Gently stir in remaining ingredients until mixture is well combined.
  • Serve with crackers, chips, a fork, or on a sandwich!
