Fruit Pie Buckwheat Bake

Inspired by Ashley at www.edibleperspective.com and her Blueberry Coconut Cream Buckwheat bake! This guy is made from buckwheat flour, which you can make in a blender from raw buckwheat groats. I suspect any kind of flour will work. The frozen fruit plumps up and tastes like pie!

Ingredients

  • 1/4 cup buckwheat flour ground from raw buckwheat groats
  • 1 tbsp buckwheat groats
  • 1 tbsp chia seeds
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/2 mashed banana
  • 1/4 cup 1% milk
  • 1/4 cup frozen mixed fruit was worried the strawberries would be too big/liquidy but they were the best part!!
  • 1 tsp vanilla
  • 1 whole egg
  • 1 tbsp coconut butter flakes not quite as good as Ashley’s stuffed cream and a bit undetectable

Instructions

  • Preheat oven to 350*
  • Mix dry [I do this the night before in a jar]
  • Mix wet.
  • Pour wet into dry.
  • Grease oven safe dish.
  • Bake for 30 minutes.
  • Cool slightly and topped with Flying Squirrel PB – Sneaky Cinnamon and GH jam – plus coconut sprinkles!
