Scrambled Egg Sandwich
This sky-high scrambled egg sandwich on whole wheat bread is layered with avocado, slices of sharp cheddar, and greens. Enjoy for breakfast or lunch!

- 2 eggs
- 2 slices whole wheat bread
- 1/4 avocado
- 1/3 cup spinach leaves
- 1 ounce sharp white cheddar
- salt and pepper
Toast bread. Meanwhile, scramble eggs as you normally would.
Layer avocado and spinach on one side.
Layer egg and cheese on second side. Season with salt and pepper.
Carefully fold sandwich together.
