Pumpkin Chia Pudding with Spiced Yogurt Whip

  • 1/3 cup chia seeds
  • 1/2 cup brewed Argentinian Yerba Mate
  • 1/2 cup milk
  • 1/3 cup pumpkin
  • 1 tsp maple syrup
  • 1/2 tsp pumpkin pie spice
  • 1 cup full-fat Greek yogurt
  • 1 tsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla


  • Brew yerba mate and allow to cool. 
  • Mix chia seeds, yerba mate, milk, pumpkin, maple syrup, and pumpkin pie spice in a bowl or jar and chill overnight. 
  • In the morning, portion pudding into two glasses.
  • Mix yogurt with maple, cinnamon, and vanilla and dollop on top of chia pudding.
