Split Pea and Ham Soup
Cured pork and sweet potato pack this split pea soup with flavor.
Servings 4 big bowls
- 2 carrots chopped
- 2 celery chopped
- 1 medium sweet potato cubed
- 3 cloves garlic
- 1 cured pork side
- 1 C split peas
- 5 C water
Sautee carrots, celery and sweet potato in some oil for 5-10 minutes until tender.
Add garlic and cook for a couple minutes more until brown.
Add all other ingredients, bring to boil, and simmer for 45-60 minutes until peas are soft and creamy. Add salt and pepper as desired, as well as any spices.
Remove pork side, trim off the fat, and finely chop for garnish.
