Tomato + Bean Pizza For One

  • 1 whole wheat tortilla I like Whole Foods brand
  • 1/3 cup white beans
  • 1/4 cup ricotta cheese or sliced mozzarella
  • 1 small summer tomato
  • Handful fresh basil
  • Salt + pepper and olive oil to taste


  • I started with a whole wheat tortillas and smashed on about 1/3 cup white beans.
  • Then sprinkled on some olive oil, salt and pepper
  • Next came a slathering of ricotta cheese! You could most definitely use mozzarella here too and make it a caprese pizza!
  • Next came slices of fresh tomato and basil from our garden. Plus a sprinkle more of sea salt.
  • Recommended consumption is with a knife and fork!
