Herby Chard Pesto Pasta Salad
Herbs + greens + pesto speak loudly in this pasta recipe!
Servings 2 Servings
- Whole wheat penne about a cup, dry
- Lots of swiss chard a whole salad spinner full
- 1 whole tomato chopped
- 1/4 cup pesto
- 2 tbsp of sour cream to make it more saucy, and because I had some leftover. Optional.
- Lots and lots of fresh herbs! I used fresh rosemary basil, dill, mint and oregano. About 1/3 a cup total once chopped
Cook pasta according to package
Place chard in a big pot along with 2 tbsp water and put on lid. Allow to steam for 3-5 minutes
Chop herbs + tomato
Drain pasta and herbs, if watery
Combine everything into large pot and add pesto, tomato and sour cream.
Toss together and serve!
