Meredith and Garrick's Fiesta Chili

This chili is perfectly spiced and has a hint of Mexican flavor!
 
* Add more peppers if you like it HOT!

Ingredients

  • 2 pounds beef stew meat or whole chuck/round roast cut into ½ inch cubes
  • 1 medium onion diced (optional - if you're into that kind of thing!!)
  • 2 mild green peppers Anaheim or Poblano, diced
  • 2 jalapeno peppers diced
  • 2 garlic cloves minced
  • 1 can Kroger organic tri-bean blend drained
  • 1 can sweet yellow corn undrained
  • 1 can diced tomatoes in sauce
  • 1 can tomato sauce
  • 1 tbsp. chili powder
  • ½ tbsp. ground cumin
  • ½ tbsp. oregano

Instructions

  • In a large stew pot, sauté onion and pepper until onion is transparent (if using onion)
  • Add minced garlic, then add stew meat to pot and cook until brown.
  • Add spices to meat mixture and stir well.
  • Add tomatoes, beans, and corn and let simmer for 30-45 minutes, stirring occasionally.
  • Serve over your choice of white rice, tortilla chips, or just enjoy it plain topped with plenty of cheese and sour cream!
  • Garnishes: Mexican-style cheese, Sour Cream, Rice, Tortilla Chips
