Kate's Kookies

These cookies are 50% butter and sugar and 50% superfood. Chia seeds create little crunchy bits with each bite and ground flax, coconut oil and whole wheat pastry flour keep them soft and chewy.

Ingredients

  • Dry
  • 2 cups whole wheat pastry flour or spelt flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Wet
  • 1.5 sticks softened butter 6 ounces
  • 1/4 cup coconut oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1/2 tbsp vanilla extract
  • Mix Ins
  • 1 cup oats
  • 1 cup chia seeds
  • 1 cup ground flax seeds
  • 1 cup chocolate chips
  • 1/2 cup raisins
  • 1/2 cup chopped pecans

Instructions

  • Preheat oven to 350*.
  • Sift dry ingredients together.
  • In a large bowl, combine wet ingredients.
  • Add dry ingredients to wet and stir until smooth.
  • Stir in mix ins.
  • Bake until they are just cooked - about 12 minutes.
