Parmesan Sun-Dried Tomato Meatballs

I love this recipe because of its simplicity. Just mix everything together in a bowl. Form into balls and bake for 25 minutes. Done.
Serve with pasta and greens.

Ingredients

  • 1 pound of grass-fed beef I used 90% lean
  • 2 eggs
  • 1/3 cup panko breadcrumbs
  • 1/4 cup sun-dried tomatoes packed in oil chopped
  • 1/2 cup shredded parmesan cheese
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • Sprinkling of garlic powder or one clove

Instructions

  • Preheat oven to 425*. Grease a pan with oil or nonstick spray.
  • Crack eggs into bowl and whisk with a fork. Add all other ingredients and mix well.
  • Form into balls and bake for 25 minutes and temp reaches 160*
