Quinoa and Walnut Granola

Ingredients

  • 2 cups rolled oats
  • 2/3 cup chopped walnuts
  • 1/3 cup quinoa
  • 1/4 cup oat flour made by putting oats in a food processor - sub whole wheat flour
  • 3 tbsp butter
  • 3 tsp honey
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/8 tsp kosher salt

Instructions

  • Start by mixing all ingredients into a large bowl.
  • Mix the butter throughout to ensure everything is evenly coated. Clean hands work well for this!
  • Once everything is moist and clumpy, pour onto a half sheet pan covered in parchment and bake at 325 degrees for about 25 minutes, stirring once in the middle to ensure even cooking.
