Nutty Granola

This homemade nutty granola recipe is a family favorite courtesy of my father-in-law, John! It's packed with nuts, seeds, and coconut and is made without oats, so it's gluten free. Almond meal, honey, and coconut oil bind it together.

Ingredients

  • 3/4 cup raw pumpkin seeds
  • 3/4 cup raw sunflower seeds
  • 3 cups sliced raw almonds
  • 1/2 cup chopped walnuts
  • 1.5 cups almond flour aka almond meal
  • 1.5 cups shredded coconut
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 3 tbsp vanilla extract
  • 1/3 cup coconut oil melted
  • 1/3 cup honey

Instructions

  • Preheat oven to 350 degrees.
  • Mix together dry ingredients.
  • Sprinkle spices evenly around.
  • Add wet ingredients and stir well to combine.
  • Spread onto a baking sheet covered with parchment.
  • Bake for 20 minutes, stir.
  • Bake for another 5 minutes.
  • Allow to cool before storing in an air tight container.
