No Bake Honey Coconut Bites

I debated what to call these - Cookies? Snack balls? Clusters? I settled on bites because their shape varies and they are pretty good for ya! The honey and coconut flavors are pronounced. Keep them in the freezer to keep their firmness.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup softened coconut butter
  • 1/4 cup chia seeds
  • 1/4 cup chopped walnuts
  • 1/4 cup oat flour
  • 1/4 cup coconut
  • 1/4 cup honey
  • 1/4 cup water

Instructions

  • Soften coconut butter to the consistency of room temperature butter.
  • Combine all dry ingredients in a mixing bowl.
  • Add coconut butter and water and mix well with clean hands.
  • Form into balls (or clusters!) Give them a squeeze to help the ingredients stick and then roll.
  • Arrange on a sheet pan and freeze.
  • Store in freezer.
