Spiced Walnut Pimento Cheese

This pimento cheese is lightened up with greek yogurt and packed with heart-healthy walnuts.

Ingredients

  • 1/2 cup walnuts
  • 1 tbsp butter
  • 1 tsp brown sugar
  • 1/8 tsp cinnamon
  • 1/8 tsp cayenne
  • 1/8 tsp kosher salt
  • For the pimento cheese
  • 4 ounces cheddar
  • 2 ounces pepper jack
  • 2 tbsp pimentos minced
  • 1/4 cup greek yogurt start light and add more
  • Juice of 1/4 lemon
  • 1/2 cup spiced walnuts

Instructions

  • Melt butter in a skillet on medium low heat.
  • Add walnuts and spices and stir frequently for about 4-5 minutes, until walnuts are fragrant and begin to brown.
  • Remove from heat and allow to cool.
  • Shred cheese by hand or a food processor.
  • Chop pimentos if necessary.
  • Add all ingredients together and mix well by hand.
