Matchy Match

I’ve been a ball of nervous energy all morning – no news on Karen yet.

But we did take out the tree!

These guys are much happier now that they don’t have to be angels!

I burned off some more energy on a conference call and then I biked to the gym and back while Matt babysat the phone.

I returned, no news, showered and we sat down to a great lunch.

Smoked Salmon + Cuc Pitas with side salads and fruit

The WW pita was stuffed with wild Alaskan salmon (a post-holiday treat to make healthy eating extra fun!) plus cucumber, capers, dijon mustard, jalapenos. All was baked for 5 minutes to warm it up

Side salads were made of spinach drizzed in olive oil and cherry vinegar plus espresso salted nuts, rosemary salt and goat cheese (another treat!)

    The smoothie sounds great..what can I use instead of milk and are rolled oats the same as quaker old fashioned oats?

      Maybe at first I will spend a lot more time there, but my ultimate goal is to continue my work as a blogger and writer while working part time doing the marketing / PR / website for the business. My hours are better paid off at the computer, if you know what I mean. So I will make every effort to keep KERF going as it is – with perhaps a bit more stress and pre-planned meals in the mix.

    Haven’t had salmon in a sandwich for ages! Smoked salmon on brown soda bread is a big Christmas thing in our house though. I love the smoothies recipe too. I can’t imagine my house without my Christmas decor now! It’s going to look so boring! X

    Random question – do you happen to have a grandmother who lives at the Elks Home in VA? I just returned from visiting my grandmother who lives there and was chatting with another resident who mentioned that her daughter was a dietitian in Charlottesville. I wanted to ask if her granddaughter had a blog, but wasn’t sure if they would known what a blog was 🙂

    It’s terrific that you will be able to cook for her! You may already know this, but some pain killers can be VERY constipating, so keep that in mind for your menu planning. Another thing you can do is rearrange some of her things so that they are easier for her to get to herself. It’s nice to have help, but nicer to be able to do things for yourself. Ask her what her coziest comfy clothes are and put them in a drawer that is easy to reach. My fingers are crossed that the news will be good and Karen will have a quick recovery.

    These house and lunch looks great. I am definitely ready to be done with the Christmas decorations, too. we have the little candles in our window and it always drives me crazy that they keep the shade from being completely shut when I go to sleep at night.
