Lately

Summer food is in its peak – watermelon, zucchini, peaches, berries! My favorite time of the year for fresh food. Sadly our garden greens have dried up, but in their place we now have tons of cherry tomatoes and a couple of heirlooms!

Breakfasts

Watermelon, Red, White & Blue swirl bread, egg, banana.

Lunches

Smoked trout over a salad with avocado, goat cheese and heirloom tomato. Lemonade water on the side

Delicious Indian-spiced tempeh soup at a friend’s house. Goat cheese + Greek yogurt on top and scones on the side.

Dinners

Grass-fed beef hot dog (!), kale chips with ketchup, grilled corn

Oven-baked cornmeal okra and tofu (loved this method!) seasoned with southwestern spices plus sweet potato fries – a small portion followed by seconds when the second pan was finished roasting

Mexican bowls that I started earlier in the day on the grill to have that done before hectic dinnertime.

I also pre-made guacamole and shredded cheese

So at dinnertime we just had to heat everything up with a can of pinto beans and some southwest seasoning

And then layer into bowls. Anything topped with guac and cheese is my favorite dinner : )

I had two meals out this week – first at Two Guys Tacos, which you previewed in my day-in-the-life post. Two Guys invited me in to test out their menu on the house.

Fish taco. Loved the beer-battered crust. Tilapia has never tasted this good in a restaurant before.

The beef and bean tacos were delicious as well – very fresh and not too greasy.

But the bean + cheese empanada was my favorite! The crust tasted like it was made in a grandmother’s kitchen (that is a high compliment) – fresh, flakey and gooey inside!

The apple churro was filled with apple goo. I only wish they had had a banana empanada available – they were already sold out! Must go back for that one.

I also loved the extra thick cinnamon chips

A great experience! Two Guys Tacos is on The Corner near UVA and would be a great spot for a quick meal any time of day.

My final dinner was a special night out with the Virginia Bloggers. Sadly only 4 of us showed up, but I had a nice time getting to know Alex, Sarah and Katie.

We dined at Maya during restaurant week, and the menu was simply divine.

Chicken + Sweet Potato Pecan Waffles served with chow-chow to start. They had me at waffle..

Grouper with pesto. Love grouper and the pesto was most definitely freshly prepared.

Plus grilled romaine and a tomato and spiced watermelon salad – and some kind of fancy French fries that I think were a mix of grits and potato!?

Course #3 was a toffee oatmeal cookie with ice cream inside. This was amazing!

    As always, your food looks delicious!

    I’m in shock that I haven’t noticed/seen the Garden of Eatin sweet potato tortilla chips in our stores. I LOVE the blue corn tortilla chips with the chili powder – they taste like nacho doritos. I’ll have to look a bit closer and see if they have the sweet potato ones.

    Summer food is definitely the best. I always miss it when the seasons change! I love that chicken + waffle dish. My mom ordered something similar out to breakfast this weekend and it was divine! You really can’t go wrong with a waffle plus some deep-fried chicken.

    So much fresh produce! You’re such an inspiration when it comes to finding easy yet creative ways to add veggies to your plate! And as always, with such marvelous photography! I can’t wait for my Farmer’s Market to come around again so I can get my fruits and vegetables and try to replicate some dishes 🙂

    I love summertime so much and the fresh fruit is one of the big reasons. I’m pretty sure I buy a watermelon, cantaloupe and pineapple at the store every week. And now that our little guy eats fruit too, it serves as double duty. This year I’ve picked up some really sweet, ripe melons and am so pleased! Sometimes it’s hit or miss but this year it’s all been spot on.

    I’ve been LOVING all of the amazing summer produce lately too. Pineapple, berries, and corn the cob have been some of my top favorites. I’ll be so sad when they all go away!

    Food looks fantastic! I love the idea of that tempeh soup.

    Fruit is one thing my house is FILLED with right now. Perfect for on-the-go smoothies or a quick sweet snack/dessert. It’s helps because I took a no baking (sweets) pledge until August!

    I want to find out that french fry recipe. They were so good! Your pictures at Maya turned out so well. I’m excited to try Two Guys Tacos. I have to admit, I thought that restaurant was going to be like another White Spot, always good but not so healthy, but the dishes look awesome!

      We have one full set of white dishes and the Luna flatware from Pottery Barn which we got for our wedding. But I add in all kinds of onesie pieces of dishes and flatware here and there.

    Wow so much deliciousness! I especially love all the summer produce! The grouper with pesto sounds amazing…one of my favorite fish! And the indian tempeh soup looks marvelous! I’d love that recipe!

    That’s cool that Virginia has a blogger group with meetups like that. I’ve been trying to find something similar in Texas. I know Austin has a pretty strong blogging community, but I haven’t been able to find the blogging community that I feel like I would fit in here in Dallas.

    i’ve had french fries made with grits & potato before, and i really think they’re awesome! so much better, to me, than a plain french fry. i would love to try grilling romaine one day. i bet that is so delish!

    What a tasty week! This has been one of my fave weeks thus far, because it is finally starting to feel like HOME to us here in Hawaii;) Moving in and decorating, sight seeing and friend-making!

    Our house is filled with fresh produce and we love it! Peaches, berries, watermelon..

    i love the idea of always having a little fruit with breakfast. i’d never think to have breakfast side dishes. but i haven’t been getting in NEARLY enough fruits + vegetables recently. in the middle of summer, no less…

    that taco place looks delicious!

    Hi Kath! Great pics on this post. I’m a HUGE fan of grilled romaine. Glad to see it on your plate:-). Our garden greens have dried up here too, but we also are getting a lot of summer fruits in as well. All your food looks so good! Thanks for sharing.

    I must ask you Kath… Let me preface this with that I used to work at Foodbuzz and I know tons about both blogs and the food service industry; but are you really that hungry at breakfast? I will have a cup of coffee and not eat again for hours. I just can’t imagine eating oats or anything at 7am. I love eggs, but they need to come past 10am for me to stomach them. Do you think it’s just a lifestyle thing thing? (For the record, I don’t drink and rarely go out) or a metabolism thing? I have always been about 111-119 and i’m 5’8″. We’ve always been thin but we eat. But I cannot imagine stomaching all that food pre 8am. Let me know. A long time follow.

    That fish taco looks amazing, but I am especially curious about the grass fed hot dog! I usually get my grass fed burgers from the farmer’s market (although the grocery store does carry a small quantity). Where did you find them?

      I got them from the Best of All Around stand at the city market, but they are actually produced in North Carolina.

    I recently saw a Great Harvest Bread Company in Salt Lake City, UT. Is it a chain or was that just a coincidence? The bread you have always looks delicious. If we have Great Harvest here, I will have to go and get some.

    Sweet potato fries are happening in my house either tonight or tomorrow night. I didn’t buy them last week (what was I thinking?!), so I’m in serious withdrawal!! I think I could eat 3 to myself in one sitting haha.

    And your iced coffee is making me wish that I wasn’t out of almond milk right now. I need to get more so I can dilute my coffee concentrate sitting in the fridge!!

    You have had some awesome meals! That tempeh soup really does sound amazing- what else was in there? I can’t tell from the pic and would love to try and make a version myself…
    And i was looking at the no bull burger site to place an order but it doesn’t say anywhere how many are in a package! Is it two or four? (It just says “pack” -And they should fix that!)

      It had frozen greens (spinach? kale?), lentils, broth, maybe some minced veg and the tempeh

      And they are 4 packs! Good catch. I’ll let them know.

    The food at restaurant week looked amazing!! I think the fries may have been polenta fries? Oh and I love everything you write about Mazen. I am in school getting my RD and I have a 9 month old. So- what you are feeding him is especially helpful!

    I love the amazing images on this page. There are plenty for all the meals of the day and they each look pretty healthy as well. I would love to try pretty much all of these.
