The Lunchbox
I’ve been dreaming up this salad from the moment we stocked our grocery cart on Sunday!!
This container is literally stuffed with great food:
- Spinach + arugula dressed in a little honey and lemon olive oil
- Salt salt
- Celery
- Carrot
- Red pepper
- Grilled eggplant
- GOAT CHEESE (!!!)
- ~1/3 cup lentils

I packed a Food For Life chewy tortilla cut into triangles for easy eating
And a sliver of Teens Eat pumpkin bread!
Gettin’ my fruit in at snacktime – I’m planning to tackle this apple + homemade Larabar (another Teens Eat food gift!) around 4:30 on my way to Emily‘s for a RUN and workout!!

I had a look at Teens Eat’s website, they have some good recipes! I like their version of PB&J Larabars (though I’ve never had the original – it just sounds good!)

I love big salads with lots of flavors! And creamy additions like goat cheese and hummus make dressing (almost) unnecessary. Hooray for weeks that fly by.
I love to eat the Food for Life tortillas with my salad and roll up little bites as I go. Of course, with my massive salads (like yours) I run out of tortillas about 1/4 of the way through!

Love your lunch salad! Big salads are my fav thing to pack. Good idea on the lentils. I usually keep chickpeas or some other bean frozen and just toss it on top… I’ll add lentils to my list! Glad to hear you’re enjoying clinical stuff. I keep getting USMLE board prep questions on PTH and calcium… guess the test makers like that stuff. It’s always good to see it in practice, though. Have a good one!

Do you have any good tips for cleaning out your Bodum? I bought one today and want to make sure I get all of the pesky grinds out of the mesh when I’m done!
Only a good sponge and soap! I find that grinds get caught in the plastic outer part too which DOES come off with a strong grip and even-weight bend!

Goats cheese makes EVERYTHING better. In fact, I think I’d even try goats cheese icecream… or at the least, goats cheesesavoury oatmeal

to laura–whether or not “you’re fine”, it’s an ethical question. if you were a patient, would you want your BMI posted on a popular blog, even were it anonymous? particularly if you were a patient dealing with weight/nutrition issues? an anorexic already feels under (often imaginary) scrutiny–posting his or her situation on a blog turns that scrutiny very real.
In regards to the HIPAA (privacy) law, I have found from personal experience, that it probably varies at institutions. I was a medical transcriptionist for about 20 years so am familiar with these things. A few months ago, my insurance carrier would not even discuss my (minor age) son and husband’s account over the telephone with me, since I was not on the policy. I told my boss who has been in the transcription business for 35 years, and she was pretty shocked at such a thing. I had to have the insurance company mail me a HIPAA form for my husband to sign to say that they could discuss insurance with me!
Nice post. I learn something more difficult on different blogs everyday. It’ll all the time be stimulating to read content from different writers and practice a little one thing from their store.
