Wake-Up Wiggles

Woke up stiff as a board this morning and knew that yoga was required even though I was ready for breakfast.

23 minutes of Power Vinyasa #3 later, I felt all warmed up and wiggled out. It’s simply amazing how much a little stretching, warmth, and movement can do.

Then it was time to dig in to these!!

Banana Chia Oat Pancakes

I used the Quaker Oatmeal Pancake mix they sent me a while back to whip up a half portion (which still easily fed both Matt and me). 1/2 cup mix, 3/8 cup 2% milk, egg white, mashed banana.

The recipe made 2 large and 2 medium pancakes to which we added banana slices during cooking. Topped with some Oikos plain yogurt, Barney Butter, chia seeds and a little syrup.

Matt made overnight French press coffee. He read that heat extracts the bitterness of coffee and we hot-brew coffee for the expedited serving, but letting it soak overnight gets all the flavor without a lot of the bitterness. So he combined the usual serving of coffee and cold water and let it sit overnight. This morning he made iced coffee and I heated mine up and added milk.

We used the Marley Coffee Lively Up blend from yesterday. It was quite good, and I believe less burnt/roast tasting. But I missed my hot French press froth, and it wasn’t as romantic as a hot French press.

This is on my birthday/christmas list: Bodum New Brazil 8-Cup French Press Coffee Maker. It’s GORGEOUS and double the size of our current 3-cup one.

I have a lot of work to do today since I didn’t do any yesterday and also have some CUPCAKE baking to do because today is someone’s birthday!!

Those pancakes look tasty! I think that pancake mix will be on my next shopping list for sure!

You hit all my favorite food groups in your breakfast! Oats, banana and peanut butter. Yum.

I like that you topped them with Greek yogurt and chia seeds. Looks like a party in your mouth!

i should try chia like that. I’ve only mixed them into things so far.

We LOVE our big 8 cup french press. That’s the only one we use now! The little one is just too little

I LOVE the new Bodum french presses. We almost got this model but wound up going with the classic Chambord model instead. Bodum is the best, and having 8 cups is a must in our household!!!

I’m loving the chia seeds in there. They almost make it look like vanilla bean bits!

And I agree about yoga. My instructor in college always told me “even a little bit is better than nothing” and it’s SO true. Even just a few poses can really help :)

I’ll have to stroll over to Bites n Bowls to give Kelsey some Happy Birthday wishes :)

I’m usually more of a tea person than coffee person so I bought the small Bodium coffee press. It is my best friend :-) I can make just a small bit of coffee in it or I can use it when I make loose tea. Such a life saver.

that is pretty much how the bou makes their cold press coffee!!! just make sure it doesn’t sit more than 12 hrs or it will taste NASTY!!! those look delicious!!!

Ha, what you call the “wiggles” I call being “loosey goosey.” I love that feeling!! :)

I’ve been making iced coffee by brewing it with hot water in my french press, then leaving it in the fridge overnight. I didn’t know it would still work with cold water. I’ve got to try that, it’ll save me the extra step of using the kettle!

your pancakes look FANTASTIC. I found this article a while ago about how french press coffee can raise cholesterol?? It’s very interesting. I worked at starbucks for a year and never knew this until recently. Hm!

I’ve also heard that French Press can raise your cholesterol. I heard that you need to filter it to get out the bad cholesterol! I really like french press coffee though..

Pancakes with chia seeds sounds like a FAB idea! I still haven’t tried Chia seeds but the texture sounds like something I would really like. Next time I’m at Whole Foods I’ll have to remember to pick some up.

A little confused about the amount of butter for the cupcakes… the recipe called for 3/4 cup of butter ( the sticks are 1/2 cup ) . So you would only need 1 1/2 sticks not 4 sticks ??? And it says it makes 24…… Your breakfast looks really good
