Glad you asked, and I meant to address that in the video. When I brine something, I do not salt it before cooking.
Here’s another dilemma: normally you’d want your meat to be at room temp before cooking, but if you take it out of the brine, it will lose some of its juice. The alternative would be to bring the whole brining liquid plus the meat inside to room temperature, but this would take too long. So I end up breaking the rules here and take the meat out of the cold brine 3 minutes before cooking and just go with it.

I’d love to do a video together but we’d need someone else to man the camera! And filming food preparation is harder than you’d think, so I don’t know if I’d trust just anyone.

, but he is a brining fool. And yep, don’t add more salt. We made that mistake the first time we brined a pork loin. It tasted like a salt lick!

I brined my whole chicken 2 weeks ago. This was a great way to marinate meat. I will do this to my chicken each time.
