Regarding your cheese inquiry, Colby is a very mild cheese and would be quite comparable to a mild cheddar, if not maybe a little milder. You’ll often find it mixed with monterey jack, making colby jack. Clearly, I’m a big fan of cheese!!

Kath, I just wanted to say thank you for making this website. You are so inspiring! I just watched your video and you made everything look so delicious and simple, that I got this urge to whip up a frittata right then. It tasted great and was so satisfying. You can also use Gruyere cheese which is yummy.
I made a frittata for breakfast on Sunday! I also wanted to let everyone know that it is easy to make it “half and half” In a seperate pan, I sauteed some spinach and added it to my half of the onions and peppers that were in the main pan because my boyfriend didn’t want it. I poured the eggs on top, and everything stayed in its place. So even if you want different things inside than your significant other, it is still a great dinner or breakfast or any meal really!

I just give our mushrooms a rinse and mild scrub – I’m not too worried about them being dirty
