Vegetarian Chili with cheese

It was a pretty low-key day around here. I did some stuff around the house and made a big pot of chili for a casual Friday night dinner. I wasn’t really hungry for a snack all afternoon. Whenever I have sweets after lunch they sit really heavy in my stomach. Perhaps that should be a new satiety strategy! Cookies with lunch! I planned the soup to be ready around 7 when the husband was due home from the bakery but he’s still out! Guess everyone wants Great Harvest with company in town. I ended up eating by myself around 8.

I did nibble on this piece of Dakota + High Five Blend while I was waiting around 7:45 before I decided I should just go ahead and eat dinner.

The chili turned out great and was really, really easy! I turned it into a recipe page for the details:

I topped it with a combo of melty gouda (on the bottom) and some shredded cheese on top – and ate it with these leftover tortilla chips!

Since dinner I’ve been watching the movie Deception that Karen dropped off to share.  I always say I hate movies that are set mostly at night with people wearing all black (they usually = violence), but this plot is pretty good. It’s also quite scary! And I love Hugh Jackman and Ewan McGregor.

yummy chili. i had that same meal for lunch today! went perfectly with the chilliness outside and the huge snowstorm.

i’m with you on those dark movies! i like the ones that are shot with vibrant colours so much better.
