Who wants a sandwich!?
Today the sandwich wizards did a fabulous job making sandwiches for all of our neighbors here at McIntire Plaza. They practiced making ‘wiches and then we delivered them around.
Danskos for comfort!
And then we feasted!
Day 3 of sandwiches for lunch. It’s pretty cool that I can eat a free sandwich at my workplace any day I like! They are pretty awesome too! I had turkey then hummus and today: Twin Oaks Tofu with basil pesto, mater, lettuce, cucumber, and mayo (we did a taste test – it adds a lot of mouthfeel!). Deeelish! I haven’t had the Curried Tuna salad myself, but Matt’s had it two days in a row and it might be my favorite one!!
For dessert – we were given some Carpe Donuts – a local organic donut shop right in our shopping center.
My first time trying them! They are made with a touch of apple cider and are amazing!
Especially the crunchy sugar topping.
I had half and went back for 1/4 more!
We think we’ve decided on a menu board placement – time to get hanging. Along with the 1,000 other things on our to-do list!!
See ya!

Tooo much fun!!! I am so stoked for it all, the team looks great!!!!
The sandwiches look great — but those donuts look amazing! I love going to the apple orchards in the fall and picking up some apple cider donuts. They are the best!
Ohh major sandwich craving now! Darn you Kath :p
The tofu sandwich looks AMAZING. I love Twin Oaks tofu
DITTO on both accounts!!!
LOL – love the photos of Matt and the donuts!

I get tofu and donut, but what’s with milkshake?
Oh just a blend of the two things in one post!
i thought you threw in some tofu & a leftover donut and made some weird dessert… jk!

Ooooh, the tofu sandwich looks so good! And so do the donuts – what a fun treat after a hard day of sandwich making
Yes, you are SO lucky you get those sandwiches for free, yum!! I love how everything is coming together… y’all are SO CLOSE!!!
Oh my gosh I LOVE apple cider donuts! They taste like fall in your mouth!
That tofu looks too good. Those sandwiches in general oh gosh. Keep up the good work!
Mmm. It would be dangerous for me to work near a place with organic donuts!!!
(GF of course, hehe.)
I wouldn’t mind a free sandwich every day… especially with a donut for dessert
Curried tuna sounds really good! I love curry and can’t believe I haven’t thought of that already. So glad to see you guys are almost done with the bakery!
My mouth is watering.
Don’t you think you’ll get sick of the food there after a while? I have worked at restaurants and after a while, I didn’t want to eat what they had! (I can imagine it’s worse when you OWN the restaurant!)
Looks delicious nonetheless!
I have no idea!
I was definitely drooling over the donuts.
It is great to see your store take shape!
So lucky that you get to eat free sandwiches like that everyday! It looks really good and I’m nto even a fan of tofu! I love the menu boards!
those donuts look divine. can you believe my husband doesn’t like them? what is wrong with him?!?
Matt’s face is priceless!!!
Now I’m off to look for a place that sells sandwiches like that around here! YUMMY!!!!
I have a question for Matt: How did you get involved in baking (bread)? Is it something that you have always loved or did you discover it at some point?
He started baking at home a few years ago and when he was unemployed he needed a job and turned his hobby into a career
So he didn’t have a background in it? What did he go to school for?
Haha I love those pictures of Matt. Now I want a donut!
This is all so amazing to me. Bit by bit, you have built a bakery!
I bet you are one proud mom! I’m proud of Matt and Kath and I’ve never actually met them!!
Yes, I am. I almost feel like the bakery is my first grandchild (I know that might sound a bit odd.)
this is a cute comment! goes well with Kath’s post the other day that was titled “bun in the oven” =)
Another delicious sandwich, yum enjoy!
Wow it’s looking really good! The great Harvest my daughter works at has the same reader boards(chalk boards)..and the silver tin looking stuff on the sides of the counter:) I never get tired of her bringing bread home!
The donuts look good!
Gosh, this is so fun to vicariously experience the opening of your bakery alongside of you, Kath…you’re doing such a great job of capturing every detail for us. I so wish I could swing by and give you a hug on a job well done.
I’ve been looking for that Twin Oaks Tofu since you posted re. visit to the community several months ago, but apparently it’s not sold in the midwest. I’d love to support such a cool enterprise and the flavor sounds really special too.
Just keep having fun…
That picture of Matt!! – Freaky! – like a floating head.
ahh! I bought one of the donuts with plans of splitting in three ways when we were there – only I accidentally ate the whole thing by myself
Looks like you guys are having a blast! Good for you!
I love that you have tofu (locally made, at that!) as a sandwich option at your shop. And now I want a donut
Danskos unite! I’m pretty sure that in order to get your teaching certification in Vermont, you are required to own a pair. I’m obsessed with my Mary Jane style!
The sammie looks great but let’s face it, I am all about the donut!
Apple cider in donuts…you know, my grandma used to make donuts and I think she added it to hers…the grandmas know best!
your bakery is going to be amazing. I dont even like sandwiches but I want one of yours!
Your “wich” is making me hungry, and I had a late lunch
It must be nice to have access to great sandwiches any day of the week!
I have never had apple cider donuts, but I am sure that I would like them being that I like apple cider.

drooling………….Wish you were my Great Harvest!
That tofu looks so GOOD! Wish I was in Cville so I could get my hands on some of that!
I’m not a big donut eater but even I have to admit that those donuts look pretty darn awesome. I definitely would have eaten 3!
Sounds like a busy day! I’ve never tried basil and tofu together but I have been successfully growing my own basil for the past month and I think I’ll have to give it a try!
Looks so fun!! The donuts look good too!
All of the sandwiches sound so delicious! Even more so than the donuts!! I can’t believe I’m saying this because I ALWAYS choose sweet over savory.
Everyday this reminds me more and more of the cafe I worked at in college. If you start handing applicants paper bags for job applications, I’ll know for sure it’s the same
Oh MAN those donuts look gooooooooood!! YUM.
Sandwich looks amazing!
That bakery of yours looks like food heaven
just thought you might like those paper plates!

WOW – those are amazing!!!
Love seeing the progress!! The sandwiches look perfect as do those cakey donuts!!
That sandwich looks to DIE FOR- wish I could hop on over and get one!
My tummy is growling now! Must make it through Zumba before dinner tho…
I need to visit McIntire Plaza more often… I wish my office were closer so it would be easier to get over there at lunchtime! You can bet I will be making special trips after you guys open though
Love tofu sandwiches, especially with hummus! Congrats on the progress of your bakery!
That tofu combo sounds amazing! The store is looking awesome!
Wow, what delicious looking sandwiches and bread! I’m so jealous and wish I lived in the Charlottesville area. I could go for some good, homemade bread from Great Harvest
And all the extra’s you are selling in the store. Good for you!
Great Harvest is seriously my favorite place in the world!!! I had one in my hometown, but now that I’m in college, I can’t go as often. I would go at least 3-4 times a week for the pumpkin chocolate chip muffins, zucchini bread, and dakota bread. Hook me up!
So exiting Kath! I found you beloved Twin Oaks tofu up here in Northern VA the other day and baked it this weekend. I am so glad i read your blog because I never would have tried it otherwise, it was fabulous! I’m not sure how I’ll ever go back to regular tofu
Woohoo! Those doughnuts do look amazing!
Oh man, those donuts look GREAT!!! And that’s coming from someone who doesn’t even like donuts!
holy cow those sandwiches looks amazing! And local, organic doughnuts?!!! Yes please!
Heidi xo
What a delightful sandwich!!!
Those sandwiches look amazing!!!!!!!!! Now I am HUN-GRY!!!! And…. LOVE the Danskos. I have a pair for special occassion too! Soo excited for you and your bakery!
Can I give you my work address to bring lunch tomorrow for all the dietitians? Thanks!
Wow, wow, wow! I’m a sucker for a good sandwich and those look amazing! Good luck with your business. I’m sure it will be a smashing success.
Mmm those types of donuts are my favorite!
What a perfect meal, those sandwiches looks perfect too
I never thought of the “free” sandwich concept. Nice! Do you think you’ll ever get sick of them?
Everything is coming together! How surreal!!!!
omg…i want that donut..like now!
danskos are the best no? love wearing them to work- a nurses favorite shoe!!
I’m starting to wish that I could have delicious sandwiches everyday too! Those doughnuts look so good. I love Matt in the background, he made my day!
I just had my first tofu sandwich the other day and loved it! I like the idea of using pesto – yum!
There’s a local farm near my house that makes their own cinnamon sugar doughnuts. SOoooo delicious! Your pictures just reminded me of them. Yum!
I’m not much of a donut fan, but I have to admit that those look good!
Coveting your eats today (as usual!). I really hope to make the trip out to Cville once you are up and running!
I wish I lived closer! I think I would probably be at your place everyday!
If I lived anywhere near your bakery, I would be there every day for those sandwiches. They look so good!
Gotta love the danskos! I wear them all year long…through the snow and with shorts. So stylish….
Speaking of Danskos, I, too, am in the restaurant business. How are your Danskos (and which style) on the slip resistance and support? I am looking into getting a pair, but have problems finding comfortable, supportive, and actually slipfree shoes. Thanks for any insight!
Your business looks fun. I admire you for that. I’ve always wanted to open my own little shop of some kind, but never had the guts to do it. Great job!
After reading this post, I am SO glad that I brought the lunch that I did: peri peri tofu, cream cheese, tomato, lettuce, basil, and cucumber on wholewheat!
I love cider donuts!! There’s an orchard in western MA that my husband and I used to go to for apple picking and they had the best cider donuts. Imagine my surprise when I found out they have a stand at the farmers market across the street from my hotel! Woo-hoo!
Donut fairies are the best kind of fairies
I had to laugh at that picture “We think we’ve decided on a menu board placement – time to get hanging.” Immediately, I pictured you standing by the windows saying, “No, a little to the left; no, now a little right; no, wait down a smidge and to the left…” Althewhile, picturing you taking it out on those poor people holding the signs thinking, ‘if I can do Chris’ bodypump with his out-of-the- ordinary extra long holds, you can too!’
I eat a sandwich every day, too! Welcome to the sandwich club
I love that your menus will be closer rather than on the far wall. When menus are written in small text and far away, they are hard to read! At least for me, lol. I better eat a carrot sandwich today.
