Thumbs Up, Thumbs Down

May 14, 2012

to rain and the end of a long, fun weekend.

to a sunny forecast and a beach trip on the horizon.

to a fridge that is low on fresh foods.

to a delicious breakfast anyways.

I filled my bowl with Siggi’s Drinkable yogurt, a whole sliced banana, Whole Foods Honey Bunches, chia seeds and sunflower butter generously drizzled on top.

Pumpkin Spice tea to pretend it’s fall

Anyone have a pocket full of sunshine?

Drinkable yogurt on cereal- I’m kicking myself for having never done this before!

Pumpkin tea sounds like a good choice on this rainy Monday. I actually opened my last can of pumpkin the other day. I was craving fall apparently!

Beach trip coming up! That is a whole lot to be excited about. Happy Monday! :)

I agree – boo to a fun weekend being over. But yay for a beach trip in the future!! I’m at the beach right now and it’s pretty much the greatest thing ever. Beach time is just good for the heart and soul :)

Pumpkin spice tea sounds delicious! I love that mug too :)

Beach sounds fun! We’ve got a super sunny forecast coming up this week so I’m hoping for lots of after-work walks and time to spend with friends outside. Happy Monday!

I agree with the rain – but it has not started here. YET. I am glad the weekend was aboslutely gorgeous though!

Your sunflower butter looks especially drippy and delicious this morning!

I am unfamiliar with chia seeds. Can you explain why you use them, and what they are please?

Thanks, and your photos are beautiful ! :)

11 KathEats May 14, 2012 at 10:54 am

I use chia seeds for their texture, although the boost of nutrition is an added bonus. They have protein and omega-3s in the form of ALA. The texture is like sprinkles when you put them loosely on top of something and they gel in water (or oatmeal!) so they provide a thicker texture.

The nitty gritty:

I wish I had a pocket full ‘o sunshine for this dreary day! However, tomorrow through Saturday looks like it is supposed to be in the 70’s and 80’s–WHOOHOO!!!

Hi Kath! I stumbled across your blog, and I love it! You’re inspiring me to be a healthier person! And pumpkin spice tea is great alllll year long:)

The rain has already moved in in upstate NY! Glad it held off for the beautiful weekend!

16 mary @ minutespermile May 14, 2012 at 9:44 am

my pockets are full of bobby pins and hair ties. I usually last about 2 hours at work until I NEED to put my hair up.

17 Jasper {crunchylittlebites} May 14, 2012 at 9:53 am

have fun at your up-and-coming beach trip Kath!

18 Chelsea @ Designs on Dinner May 14, 2012 at 9:54 am

Yay for beach trips! Wisconsin has been lovely with sunshine the last few days, so I’ll send some your way! :)

19 kaila @healthyhelper May 14, 2012 at 10:01 am

Had a dose of fall with my breakfast too! Pumpkin yogurt…yum!

20 Ashley @ Coffee Cake and Cardio May 14, 2012 at 10:02 am

Enjoy this rainy day! You can make it fantastic!

21 Katie @ Talk Less, Say More May 14, 2012 at 10:03 am

Having a beach trip to look forward to is one of the best things ever. :)

22 Lindzjane115 May 14, 2012 at 10:17 am

When is your beach trip?! So fun!

Dreary Mondays are the worst…it’s hard enough to get up and be productive, without the rain adding more deterrent, haha!

23 KathEats May 14, 2012 at 10:30 am

Mem day weekend!

24 Averie @ Averie Cooks May 14, 2012 at 10:43 am

funny about the pumpkin spice tea…I was thinking about making pumpkin cupcakes the other day!

25 Angela @ Happy Fit Mama May 14, 2012 at 10:46 am

If you find the pocket full of sunshine, can I borrow it? It’s gray and rainy here, too. Boo!!! Monday’s are extra hard when it’s raining.

26 Susan H. @ The Food Allergy Chronicles May 14, 2012 at 11:52 am

Thankfully it is lovely and sunny here in Southern Ontario…it is Track and Field Day at my son’s school. Having a quick lunch and have got to head back now! I love this part of being a mom!

27 Tiffany May 14, 2012 at 12:24 pm

Hey Kath,

Do you store you Trader Joe’s sunflower seed butter in the fridge or just store it on the counter top?

I love how drippy it is when you first open the jar but after it sits in the fridge it looses the drippy effect. I want to leave it on the countertop but on the side of the jar it says refrigerate after opening. Thought I’d ask if you’ve had success leaving it on the countertop. Thanks!!

Have great day! :)

28 KathEats May 14, 2012 at 12:36 pm

I store it on my countertop. I think the fridge recommendation is just to prevent oil separation, which isn’t a problem if you just give it a stir before dripping it on

29 Amanda @flecksofgreen May 14, 2012 at 2:05 pm

I think I have a pocket full of sunshine–but it seems as though that is the only place the sun is shining today! A gloomy day does not mean gloomy food! Your pictures are always far from gloomy. Though there might be sunshine in my pocket, there is definitely sunshine on your tabletop!

30 KathEats May 14, 2012 at 3:24 pm

Please email it to me ASAP!

31 Amanda @flecksofgreen May 14, 2012 at 5:06 pm

If only it were that easy! Then we would never have a cloud in the sky :)

32 Taylor May 14, 2012 at 3:11 pm

OMG, I am crazy about sunflower butter. I put it on everything and I have been known to go through a jar in a week, without the help of my husband who doesn’t like the color. Thumbs down to him, up to the sf-butter!

33 Fran@ Broken Cookies Don't Count May 15, 2012 at 5:17 am

We could use some sunshine here in NJ also. Way too many dreary days!

34 Lexi @ You, Me, & A World to See May 16, 2012 at 1:10 am

Pumpkin spice in may? I can be down with that 😉
