The Tables Have Turned

September 30, 2011

First wasps, then..squirrels? Too many creatures are eating their meals on our outdoor table!

Must be because it’s such a nice photography backdrop : )

I went to Body Pump today to hang with Vanessa and Sarah (missed you Katherine!). Class was extra hard today – definitely had to take a few breaks during biceps!

Back home I showered and made a killer [wasp] salad –

Spinach, olive oil, roasted squash (LOVE cold squash on salads!) and fennel, chips and…coconut black bean dip!

The only difference was that this time I used cooked beans, which I made with garlic. I did not love it as much with the faint garlic taste, but since it’s halfway a savory dip, it was OK.

Grapes on the side!!

Couple more things to do this afternoon…then it’s the weekend! Compared to the last month, we have relatively few things to do this weekend!

Love cold squash/pumpkin on salads…any grilled veggies cold for that matter!

2 wymberley September 30, 2011 at 1:17 pm

Do you just dump the squash on? I’m thinking you must roast it right?

3 KathEats September 30, 2011 at 1:21 pm

Yup – see last night’s dinner post for the roasting info

4 Ashley @ Coffee Cake and Cardio September 30, 2011 at 1:17 pm

I too LOVE cold squash salads… soooo good! I’m glad you made that bean dip again!

5 Julie @ Peanut Butter Fingers September 30, 2011 at 1:18 pm

squirrels! my dad calls them “rats with long tails.” :) they freak me out b/c when i was a tour guide in college, one fell OUT OF A TREE and landed in the middle of our tour group. terrifying. i cursed really loudly (because i’m so professional) and have been scared of them ever since!

7 katie @KatieDid September 30, 2011 at 1:20 pm

mmm leftover cold squash and other roasted veggies are surprisingly tasty. Even tastier than when warm in my opinion. I love low key weekends once in a while too. This weekend will be lots of catching up for me too and I’m excited about it!

8 Deva @ Deva by Definition September 30, 2011 at 1:22 pm

I love cold roasted veggies, especially on a salad with some balsamic reduction and goat cheese. So delicious!

9 Lisa Fine September 30, 2011 at 1:28 pm

Yum for leftover roasted veggies of any kind!

As for critters, we seem to have some bats living in our outside walls. Once in a while when I go out to sit on our deck, I notice a bunch of bat droppings in the floor. Yuck! :(

10 Allyson September 30, 2011 at 1:32 pm

Long time reader, first time commenter :) Sometime, I’d love to see a picture of your salad when you’re half way through it. Your salads are always so pretty, and no doubt delicious, but I have a hard time imagining how exactly they get eaten. Do you mix it all up? Cut the veggies into smaller pieces and then dive in? Just a few thoughts I had. Thanks for inspiring me to eat real!

11 KathEats September 30, 2011 at 1:33 pm

I just stuff it in my mouth!! haha.

I just kind of eat through it – I often eat bowl meals from left to right so I get the good toppings and the boring unders equally throughout the meal.

12 Cait's Plate September 30, 2011 at 1:34 pm

The animal love of all thing’s Kath’s living area continues!! The one good thing is at least they’re always relatively small? Haha.

13 kathleen @ the daily crumb September 30, 2011 at 1:37 pm

i tried your black bean dip a few weeks ago… easy, healthy, and delicious!!

i love low key weekends with minimal commitments. enjoy, kath!

Mmm I love squash in my salads. They’re so nutritious and perfectly sweet, usually. And gosh I love that wooden table–it’s so story-like, which I think is really fun. And the squirrels must love taking food pictures too! 😉

15 Angela @ Eat Spin Run Repeat September 30, 2011 at 1:53 pm

The grapes look so juicy! I’m with you on the cold squash thing – another similar thing that’s equally as good is cold sweet potato fries (the homemade kind). Yum!

16 Chelsea @ One Healthy Munchkin September 30, 2011 at 1:59 pm

At least your squirrels are staying outside – we once had them in our attic and they were such a pain! 😛

17 Katie @ Peace Love and Oats September 30, 2011 at 2:03 pm

I also had roasted squash on spinach as a salad for lunch! Although mine also included chickpeas, avocado, sliced beets and Annie’s ginger lite dressing. Soooo addicting!

18 Angel7 September 30, 2011 at 2:05 pm

Maybe the wasps and squirrels will become your friend like the cats you have befriended in the past :) You must be the animal whisperer (LOL)

19 Lindsay @ bikingbeforebed September 30, 2011 at 2:09 pm

I had squash in my salad for the first time this week and I was a huge fan. Is your little bowl from Anthropoligie?

20 KathEats September 30, 2011 at 4:11 pm

21 Hope @ With A Side Of Hope September 30, 2011 at 2:09 pm

The animals love you! Haha. That salad looks delicious! Cold roasted squash sounds like it would be great on a salad! I’m going to save some squash that I make tonight to put on a salad! Yum :)

22 Lynn @ the actor's diet September 30, 2011 at 2:11 pm

Perfect fall lunch w woodland creatures! You are a regular snow white!

23 Lauren @ What Lauren Likes September 30, 2011 at 2:23 pm

24 Krissy @ Shiawase Life September 30, 2011 at 2:25 pm

You’ve got a regular menagerie there!

25 Annette @ EnjoyYourHealthyLife September 30, 2011 at 2:27 pm

You are an animal attracter! That is awesome.

I just ate a delicious salad with goat cheese, almonds, nectarine, and broccoli slaw with Panera’s poppyseed dressing. SO good! I love me a good lunch :)

26 Averie @ Love Veggies and Yoga September 30, 2011 at 2:29 pm

The animals know a good photography hangout when they see one.

I sure do :) I’m envious of all your photography options and real natural light and backyard for photography!

27 [email protected] Flying ONION September 30, 2011 at 2:37 pm

That table is gorgeous! I love the old-world, rustic feel. 😀

28 Fran September 30, 2011 at 2:50 pm

The salad looks great! I’ve got to get some squash to roast, that looks so tasty!

29 Jen September 30, 2011 at 2:50 pm

You’ve been eating a lot of squash! Roasted butternut on salads is delish. I can only eat so much of it though. Usually.

30 Katherine September 30, 2011 at 2:54 pm

I missed being at Pump! I did Kettlebell yesterday and didn’t want to lift again today, but ended up not doing anything… I guess it isn’t too late! Haha! I need to tweak my workout schedule a little bit. I need another Pump in there!! I plan on being there Monday. :)

31 KathEats September 30, 2011 at 4:11 pm

See you Monday!!

32 Julie H. of Spinach and Sprinkles September 30, 2011 at 4:01 pm

Pretty sure that dip is going down….. like right now! For real!

33 Hilliary @ Happily Ever Healthy September 30, 2011 at 4:15 pm

That salad looks delicious!

34 Molly @ RDexposed September 30, 2011 at 4:46 pm

I love finding squirrel’s leftover meals. I always try to side step it on the sidewalk or steps so it can stay put because it’s so darn cute!

35 Kelly September 30, 2011 at 4:50 pm

Looks delicious! Happy Friday :)

36 J3nn (Jenn's Menu and Lifestyle Blog) September 30, 2011 at 7:48 pm

Cold squash on a salad sounds good, never would have thought about that. I’ve had warm sweet potato wedges on a salad, though! :)

37 chelsey @ clean eating chelsey September 30, 2011 at 8:32 pm

I love cold squash on salads too – so delicious!

38 Donna September 30, 2011 at 8:36 pm

Your meals always look great, but sometimes, don’t you just crave some Oreos?

39 KathEats September 30, 2011 at 10:06 pm

Buttercream frosting, yes. Biscoff, yes. Beer, yes. Good cheese, yes.

I don’t really crave oreos though. But they are good!

40 JenATX October 1, 2011 at 9:52 am

haha I do crave oreos sometimes, which is why I bought a pack the other day. I think they just remind me of being a kid.. oreos dunked in milk was my afternoon snack :)

41 Kelly @ Foodie Fiasco September 30, 2011 at 8:48 pm

Am I the only one craving grapes? I guess not! That salad looks incredible! 😉

42 Betsy September 30, 2011 at 9:12 pm

Mmm mmm, lovin’ the cold squash this time of year. Butternut, acorn, spaghetti, it’s all so tasty. I even had some cold cubed squash with my eggs this morning in leu of the gf-toast! Good combo, I can attest. I hate pesky pests that linger – you have a good attitude. I can’t STAND cats, awful, I know. I’m just a dog girl! And wasps, well, no thank you! Squirrels don’t bother me too much, haha. By the way, your new home looks just so lovely!

43 Kim @ Eat, Live, and Blog September 30, 2011 at 9:29 pm

Your salad looks amazing! I need to try putting squash on my salad! :)

44 Jamie C. September 30, 2011 at 9:35 pm

I have to say, you have inspired me to dive into pumpkin a little earlier than I usually do…. I have to share my overnight oats for tomorrow morning because I am SO excited for them!
1/4 cup yogurt
1/2 cup pumpkin
1/3 cup oats
1/4 cup applesauce
1/2 of a small apple diced up
4 small ginger snap cookies crumbled up (there’s a really great brand at whole foods that doesn’t have much sugar in them at all and are really small and yummy!)
sprinkle of chia seeds
1/3 cup skim milk
1 tbsp crunchy barney butter, melted a bit and drizzled over the top

I cannot wait to try these! Thanks for your fall inspirations this week!

45 KathEats September 30, 2011 at 10:06 pm

Sounds great!

46 Roseanna October 1, 2011 at 1:55 pm

Your grapes look ethereal.

47 Allie October 3, 2011 at 12:09 am

Your red, white and turquoise bowls are to die for!! Where did you get them? I love the idea of cold squash on salads :)
