My coffee adventure led me to Dilworth Coffee where I met Amelia and her husband Kevin who live in Charleston and were on their way up through Charlotte. (I met them for dinner at the end of the summer too!)
I ordered a Snickerdoodle coffee with steamed milk on top to drink
We took our coffees and their doggin’ on a long walk around our neighborhood and chatted up a storm. Since Amelia is a Johnson + Wales trained pastry chef and works in a bakery, I quizzed her for a buttercream recipe to put on the cake/cupcakes that I’m making for Caitlin’s birthday and Halloween (shhh don’t tell her!) Turns out Amelia has a tried-and-true Swiss Meringue buttercream recipe that she recited to me step by step while we walked and wrote it into my iPhone. We shall see how I do! [I'll share the recipe later]
After I said goodbye I went into Harris Teeter to buy some BUTTER for this frosting!
By the time I walked home, I’d been on my feet for two hours. It seemed a little silly to go to the gym after that and my hamstrings are very sore from yesterday’s Sculpt class, I decided to do a little yoga to stretch them out and call it a pre-race day.
During the end of 30 minutes of Yoga For Runners, Matt came in and I ended my savasana with a shoulder massage on the floor!
I got up and went to shower and when I came down someone was enjoying another one of his floor naps. He hadn’t budged since he walked in the door!
Whilst at the store, I also picked up some kale for lunch – I was having a craving for KALE CHIPS!
12 minutes at 350* is perfect for my oven. I topped them with a little Krazy Salt
Crunch, crunch, crunch!!
I also had a small slice of Flax Oat Bran with some pumpkin seed butter
And some Pumpkin Pie Yogurt with a few tbsp of Mix My Granola!
Perfect variety of flavors, textures and food groups at this meal
I need to study some Metabolism (test on Monday!!) and do some baking! In that order.
And my computer monitor just arrived!!!!!!!!!!!!!!!!!! Too bad the computer is still probably a week away

Pumpkin seed butter? I don’t think I’ve ever had that. Looks interesting! Wish I could master kale chips, I fail miserably at them.

help! can you use regualar ground coffee (like you buy at the store) and be successful with a french press or does it really need to be something special?

That lunch looks tasty. The kale is so dark green, you just know it’s chock full of good vitamins and minerals. I’ve never thought to toast them like that, will have to try that soon. The dining hall at Structure House, where I work, makes a really good spinach cheddar square which uses lots of the leafy greens. Perfect for these cool fall days, just like your pumpkin goodies!

yep, josh is all over the floor nap at times as well! i find it half cute, half sad — like, “babe, the bed isn’t even up a flight of STAIRS!”
Mmm kale chips…I’ve never been able to make them in my (super) limited kitchen, but the health store sells their homemade ones topped with maple syrup and coconut. I die. Aw, the shoulder massage is so sweet. Wish my boyfriend would do that!

I finally tried your Kale Chips not that long ago and they are AWESOME!!! I’ve shared the recipe with friends who love them now too. I have to get my hands on some of that Pumpkin Stonyfield Yogurt – I love pumpkin flavored things. They don’t carry it at my grocery (in NYC we get limited flavors probably due to space) so I need to try another NYC grocery store or have my mom bring some in from NJ!) It looks YUMMY!
The pumpkin pie yogurt looks delicious. And kale chips are always awesome! The floor nap cracked me up, haha!

I love kale chips! The vegetable stand I visit is selling these huge bundles of kale right now for $1, so kale chips and pan fried kale has been a staple lately.
Too funny about Matt on the floor.. in undergrad I used to love laying on my friend’s floor to rest and watch tv! Super comfy for sure!

I’m sure her crazy frosting is going to be DEElish! I have an awesome frosting recipe that I have made a few times now and I am in love with it. It doesn’t use ANY powdered sugar, like most recipes call for, so it is super creamy and not insanely sweet. If you ever want it, just lemme know
