Paper writing has begun (I’m doing my research + writing + citations simultaneously this time) and I am determined to have it finished by dinnertime!!
I went to Sculpt class with Victoria today. We met first and did 30 minutes on the ET as a warm-up. Class was good – but our final 10 minute segment was all gliders and blurpies and I could barely do 30% of what we were asked to do! We were supposed to do 3 rotations through two sets of each and after the first set I pretty much collapsed on the floor and didn’t get back up!! (OK, I did get back up, but I did a very modified version
) My shoulders are still burning!
Once home I knew I had a half a squash and some leftover dal to eat. I microwaved the squash for 3 minutes and then put it in a 425* oven for 25 minutes while I showered and dressed.
I stuffed the squash with about half a cup of our lentil chicken curry dal from the other night…
And topped it all off with a dollop of Deb’s Pecan Butter! I was going to put some walnuts on top, but when I spotted the pecan butter I knew the creaminess would melt in and be perfect. And it was.

Standing on a chair! I didn’t know what to pair with this squash – fruit had too much fiber for a fibrous lunch and yogurt seemed like too much too, as did a spinach salad or carrots [obvi. my other lunch staples
] So I just had the squash (and left about 15% on my plate – too much skin!)
Annnnn dessert – buttery Biscoff!

Good luck on finishing! I’ve tried nut butter and squash or other savory foods and it just doesn’t taste right to me, unless it’s The Heat Is On by PB&Co. which I just ate with a veggie burger

I don’t know if “blurpie” was supposed to be “burpie” but I’m assuming yes. Those are hard! We did them all the time in boot camp and they are great for blasting your heart rate with strength training too. Those and mountain-climbers were SO hard for me at the beginning, but the more I did them (as one would guess) the easier they got. Sounds like you got a great gym session in!
I made my first ever acorn squash over the weekend and unfortunately didn’t like it at all! The toppings were great (butter and brown sugar…hehe not healthy), but it was the squash itself I didn’t like. too bad

Lovely lunch! I had a Kath-esque lunch today and since I don’t have a blog, I just wanted to share. It was an Autumn Salad–mixed baby greens, roasted butternut squash, pear, dried cranberries, feta cheese, and pepitas. All drizzled with a little balsamic vinegar. It was absolutely delish!

I pretty much had the same thing for dinner last night! Squash stuffed with leftover lentil curry. So good!
I know you weren’t a huge fan of Jillian MIchaels’ 30 Day Shred, but you should really give her Banish Fat, Boost Metabolism a try. It’s all cardio, no weights, and it is tons of stuff like burpies, high knees, etc. for 50 mins. I usually burn about 450kcal doing it, and it’s great for those days when you don’t want to leave the house!

YUM, I love “stuffed” meals- so fun to make and eat!
I have a total love hate relationship with burpies. At my old gym there was a class called “Prison Break” – and oh my word it was hard – during the class in between squats and other assorted exercises there was the dreaded BURPIE PYRAMIDS!!!! They go a little something like this – Do 10 burpies (when in down position a push-up WAS required as was a significant jump after getting up) – then go 10 jumping jacks. Do 9 burpies, then 9 jacks – repeat process until you are at zero!! I thought I was going to barf during the first class I went to – but I quickly grew to like the challenge of the burpie pyramid and would get an CRAZY high from finishing them all properly. I built strength and endurance and I sadly miss them in some crazy way. I need to start doing them again on my own – I need someone to yell at me to get through them .. hahaha!
Love body sculpt classes. It’s funny because I can usually keep up fine in those classes but straight running has been kicking my butt lately. p.s. love your plates.
Yumm I really must try an acorn squash. I’ve been all about the butternut squash lately, but need to branch out!

When I flew Delta last week, they said they were out of Biscoff.
But my sister got some on her flight the day before, so I just stole hers. Oops!
I just held that type of squash at Whole Foods today! In the end I got a solid colored buttercup because I had been wanting to try it, but next time I will get that kind!
Oh and I always devour the biscoff cookies and never even knew they had Delta imprinted on them until now!

It’s like a Pleasure Squash? Plush? Something weird! It was next to the acorn. The inside was kinda like spaghetti squash. I didn’t like it as much as acorn + butternut.

I love, love, love squash. Although I think butternut takes the cake for flavor and ease of preparation (cutting the skin off the ribs of acorn squash is time consuming). I was listening to the splended table on NPR this afternoon and Lynne Rossetto Kasper answered a question about how to use winter squash. Almost all of her sugestions were sweet recipes. I prefer my squash savory and slightly spicy. Molly’s recipe for Butternut squash with chickpea salad is one of my new favorites. The recipe is on her blog Orangette.blogspot.com.
